What you’ll need
Whole wheat flour
Sugar
Salt
Baking soda
Ground Flax seeds
Quaker oats
Chopped Walnuts
Unsalted butter
Large eggs (Room temp)
Fat free or Full fat Buttermilk (Room temp)
Vanilla extract
Butter extract
Cinnamon
All spice
1 large ripe banana
Preparation of ingredients
Dry ingredients
Step 1- Add 1 cup whole wheat flour, 2 or 3 tablespoons ground flax seeds, 2 or 3 tablespoons quaker oats, 2 or 3 tablespoons chopped walnuts, 1/4 cup sugar, 1/2 teaspoon baking soda, 1/2 teaspoon cinnamon, 1/4 teaspoon all spice, and 1/8 teaspoon salt into a medium-sized bowl. Stir all ingredients together and set aside.
Wet ingredients
Step 2- Mash 1 or 2 ripe bananas into a separate medium-sized bowl until creamy and smooth. From there add 1 cup fat free or full fat buttermilk (Room temp), 1 large egg (Room temp), 3 tablespoons melted unsalted butter, 1 teaspoon vanilla extract, and 1/2 teaspoon butter extract. Stir all ingredients together with a whisk until combined and set aside.
Step 3- Pour wet ingredients into the dry ingredients. Stir with a spoon until the mixture starts to come together. Let batter rest for 5 minutes. Batter will be lumpy and thick, that is normal.
Preheat fire to medium low heat.
Step 4- Heat pan or skillet for 1 to 2 minutes. Pour 1/4 or 1/3 cup of prepared pancake batter into pan or skillet. Carefully spread batter around skillet to ensure it’s an even circle. Let sear for 2 to 3 minutes on each side. Place pancakes onto a serving dish and wait 2 to 4 minutes before serving. Add butter and syrup on top. You can also add some bananas and walnuts and cinnamon as an extra garnish. Enjoy!
