What you’ll need
Cake flour
Sugar
Salt

Unsalted butter (Room temp)
4 Large eggs (Room temp)
8 ounces Sour Cream (Room temp)
Whole milk (Room temp)
Canola oil
16 ounces fresh strawberries
16 ounces frozen strawberries (Thawed)
1 large lemon
Gelatin
32 fluid ounces Heavy whipping cream
Confectioners’ Sugar
Vanilla extract
Butter extract
Almond extract
Tools you’ll need
Baker’s Joy nonstick baking spray
Two 9-inch round baking pans
Disposable piping bags
Mesh Strainer
Wilton 1M tip with coupler
Making the cake
Step 1- Sift 2 1/2 Cups Cake flour, 2 teaspoons baking powder and 1/4 teaspoon salt into a medium sized bowl. Stir all ingredients together.
Step 2- Add 2 sticks unsalted butter (Room temp), 1/3 cup canola oil and 2 1/2 cups sugar. Mix on high speed for 3 minutes. Scrape down sides of bowl.
Step 3- Add 4 Large eggs (Room temp) one at a time while mixing on a medium low speed.
Step 4- In a separate bowl add 3/4 Cup Sour cream (Room temp), 3/4 Cup whole milk (Room temp) 2 teaspoons vanilla extract, 2 teaspoons butter extract and 1 teaspoon almond extract. Stir all ingredients together.
Step 5- Spray baking pans with baking spray and preheat oven to 325 degrees.
Step 6- Add 1 cup Cake flour mixture and 1/2 Cup milk/Sour cream mixture. Mix on a medium low speed until combined.
Step 7- Add 1 cup Cake flour mixture and 1/2 Cup milk/Sour cream mixture. Mix on a medium low speed until combined.
Step 8-Add 1/2 cup Cake flour mixture and 1/2 Cup milk/Sour cream mixture. Mix on a medium low speed until combined.
Step 9- Add Cake batter into prepared baking pans. Spread cake batter around pans as evenly as possible. Shake pans slightly and lightly tap pans on table or countertop.
Step 10- Place into a preheated 325-degree oven for 40 minutes. Once done remove cake out of oven. Toothpick test inserted should come out clean. Let cake layers cool completely.
Making the Strawberry Sauce
Step 11- Add 16 ounces of frozen strawberries (Thawed) into a food processor. Blend for 1 minute.
Preheat fire to medium high heat.
Step 12-Add Strawberry puree, 1 cup sugar and squeeze a 1/2 of a lemon into a medium sized pot. Stir all ingredients together. Let come to a simmer then let simmer for 6 minutes.
Step 13- Pour Strawberry sauce into a medium sized bowl. If you don’t like the seeds of the strawberries, add a mesh strainer inside the bowl and add strawberry sauce. Place into fridge and let sit overnight.
Making the Gelatin
Step 14- Add 1 cup hot water and 1 package of gelatin into a small container. Stir continuously until gelatin dissolves into the water. Place in fridge for 4 hours or overnight.
Step 15- Place 3 tablespoons of the firm gelatin into a small bowl. Heat in microwave for 20 seconds.
Making the Whipped Cream
Step 16- Add 3 cups heavy whipping cream, 1 cup confectioners’ sugar and 1 tablespoon vanilla extract into cold stand mixer bowl. Mix on high speed for 4 minutes. Add Gelatin at the 2-minute mark. Once done place into fridge.
Preparing the Strawberries
Step 17- Rinse 16 ounces fresh Strawberries with cold water. Dry each strawberry with a napkin. Cut stem off strawberries and cut each strawberry in half. Transfer strawberries into a medium sized bowl.
Step 18- Add 1/2 teaspoon sugar. Toss strawberry slices with your hands and place into fridge.
Assembling the cake
Step 19- Optional Add strawberry sauce into a squeeze bottle. Add 3 cups whipped cream into piping bag.
Step 20- Trim top portion of each cake layer. Spread a small amount of whipped cream on to your cake’s serving dish.
Step 21- Add bottom layer of cake on to the cake’s serving dish. Add 1/4 cup strawberry sauce on top of cake. Spread strawberry sauce around cake layer as evenly as possible.
Step 22- Pipe a generous amount of whipped cream going all around until the entire cake layer is covered. Spread whipped cream around cake layer as evenly as possible.
Step 23- Add Strawberry slices on top of whipped cream. Pipe a small amount of whipped cream in between each slice of Strawberry.
Step 24- Add a generous amount of Strawberry sauce on top of whipped cream and strawberry slices.
Step 25- Add top layer of cake on to the cake’s serving dish. Add 1/4 cup strawberry sauce on top of cake. Spread strawberry sauce around cake layer as evenly as possible.
Step 26- Pipe a generous amount of whipped cream going all around until the entire cake layer is covered. Spread whipped cream around cake layer as evenly as possible.
Step 27- Add Strawberry slices on top of whipped cream. Pipe a small amount of whipped cream in between each slice of Strawberry with a piping bag fitted with the Wilton # 1M tip.
Step 28- Add a generous amount of Strawberry sauce on top of whipped cream and strawberry slices. Place cake into fridge and let set for 30 minutes before serving.
