Preparation of ingredients
Fruits
Step 1- Rinse your strawberries, Kiwi’s and lemons with cold water. Make sure you remove the hairy part of the kiwi by taking a knife of potato peeler and glide it around the skin of each Kiwis.
Step 2- Cut each lemon in half. Juice each lemon half with the citrus juicer. Pour the fresh lemon juice into a measuring cup and set aside. Once done you should have 1 and 1/4 cups fresh lemon juice left over.
Step 3- Cut the stems of each strawberry off and discard. From there cut the leftover strawberries into small pieces.
Step 4- Cut the top and bottom portions of each kiwi with a knife. From there cut the leftover kiwis into small pieces and set aside.
Pureeing the fruit
Step 5- Add strawberry pieces into a food processor. Blend for 1 minute and add the pureed strawberries into a medium-sized bowl and set aside.
Step 6- Add kiwi pieces into a food processor. Blend for 1 minute and add the pureed kiwis into a medium-sized bowl and set aside.
Assembling and pasteurizing the lemonade
Preheat fire to medium heat.
Step 7- Add 3 quarts water, 1 and 1/4 cups fresh lemon juice, pureed strawberries, pureed kiwi, 1 and 1/4 or 1/2 cups sugar and 1/8 teaspoon salt into a large pot. Stir all ingredients together. Let get hot for 10 to 15 minutes. Turn your fire off. Let the lemonade cool for 1 to 2 hours.
Step 8- Pour half of the cooled lemonade into a mesh strainer with a medium sized bowl underneath it. Stir the pulp in the mesh strainer with a spatula and press the pulp into the strainer to allow the lemonade to drain into the bowl. You can place the leftover pulp into a medium-sized bowl, or you can discard it. Repeat this step 2 times only.
Step 9- Pour the cooled lemonade into a 4-quart plastic pitcher and cover with a lid. Place into fridge overnight (15 to 24 hours) before serving.
