What you’ll need
Graham Crackers
Unsalted butter
Sugar
Salt
1 or 2 cans sweetened condensed milk
5 large eggs (Room temp)
1 pound frozen strawberries (Thawed)
1 large lemon
Heavy whipping cream
Cream cheese (Room temp)
Vanilla extract
Confectioners sugar
Tools you’ll need
9 inch round deep dish pie pan
Disposiable piping bag with tip cut off
Wilton #1M tip
Mesh strainer
Food processor
Graham cracker crust
Step 1- Add 9 whole graham crackers into a food processor. Blend for 30 seconds to 1 minute or until mixture resembles coarse crumbs.
Step 2- Transfer Graham crackers into a medium sized bowl and add 2 tablespoons sugar, 7 tablespoons melted unsalted butter and 1 teaspoon vanilla. Stir all ingredients together until combined and set aside.
Preheat oven to 350 degrees.
Step 3- Add graham cracker crumbs into pie pan. Press crumbs onto the bottom and sides of pie pan with your fingers. Once the crust has been formed place into a preheated 350 degree oven for 7 minutes. Remove crust from oven and let cool for 40 minutes to an hour.
Strawberry sauce
Step 4- Add thawed strawberries into a food processor and blend for 1 minute or until strawberries or pureed.
Preheat fire to medium high heat.
Step 5- Add pureed strawberries, 2/3 cup sugar and squeeze 1/2 of a lemon into a small pot. Make sure you have a mesh strainer placed over the pot while squeezing the lemon. Stir and let simmer for 10 to 15 minutes. Once done turn fire off and let cool completely. You can also make this in advance but make sure the sauce is at room temperature before adding it into the batter. This will ensure everything will mix together.
Making the filling
Step 6- Separate 5 eggs at room temperature. Place egg whites into one bowl and place egg yolks into separate bowl.
Step 7- Add 1 or 2 cans or 1 1/2 cups sweetened condensed milk and 5 egg yolks (Room temp) into stand mixer bowl. Mix on medium speed until combined.
Step 8- Add Strawberry sauce, 2 teaspoons vanilla extract and 1/8 teaspoon salt. Mix on high speed for 2 to 3 minutes. You can reserve some of the strawberry sauce to pour on top of the pie as decoration.
Preheat oven to 350 degrees
Step 9- Pour batter into pie pan fitted with Graham cracker crust. Place into a preheated 350 degree oven for 20 minutes. Remove pie from oven and let cool completely. Once the pie has cooled place into fridge for 3 to 6 hours or overnight.
Making the topping
Step 10- Add 1 cup heavy whipping cream, 8 ounces cream cheese (Room temp), and 1/2 to 2/3 cup sugar in stand mixer bowl fitted with whisk attachment Make sure your mixer bowl is cold. Mix on high speed for 30 seconds. Do not overmix, this will cause the topping to become runny.
Step 11- Add cream cheese mixture into disposable piping bag fitted with Wilton 1M tip. Pipe topping on top of pie. If you reserved some of the strawberry sauce, you can drizzle that on top. You can also add fresh strawberries on top as well. Serve cold and enjoy
