What you’ll need
2 pints fresh blueberries
1 small lemon
1 large egg
All-purpose flour
Sugar
Salt
Unsalted butter (Cold)
Butter flavored vegetable shortening (Cold)
Vanilla extract
Tools you’ll need.
9-inch round deep-dish pie pan or 8 by 8-inch square baking pan
Food processor or pastry cutter
Rolling pin
Pastry brush
Preparation of ingredients
Top and bottom crust (part 1)
Step 1- Add 2 cups all-purpose flour, 3 tablespoons sugar and 1/4 teaspoon salt into a food processor. Pulse 2 or 3 times. Next add 6 tablespoons cubed unsalted butter (cold) and 6 tablespoons butter flavored vegetable shortening (cold). Pulse for 8 to 10 times. Transfer the flour mixture into a medium-sized bowl.
Step 2- Add 1/3 cup cold water and stir with a sturdy spoon until mixture starts to come together. From there form the mixture into a dough with your hands and knead for 30 seconds. Place into fridge for 15 minutes.
Blueberry filling (Part 1)
Step 3- Add 2 pints fresh blueberries into a mesh strainer and rinse with cold water. Remove the stems off of the blueberries if any. From there add the rinsed blueberries into a medium-sized bowl and add 1/2 cup sugar, 2 teaspoons vanilla extract, squeeze half of a lemon, 1 tablespoon melted unsalted butter, 1 teaspoon all-purpose flour, and 1/4 teaspoon salt. Stir all ingredients well until combined and set aside.
Top and bottom crust (Part 2)
Step 4- Form the dough into a ball and cut the dough in half. From there you will have 2 halves. One half will be for the top crust and the 2nd half will be for the bottom crust.
Forming the bottom crust
Step 5- Lightly flour the surface of your table. Add the first half of the dough on top of the table and press down with your hands until the dough is a flat circle. Lightly sprinkle all-purpose flour onto the dough and roll the dough into a 9 or 10-inch round in diameter circle using the rolling pin.
Step 6- Carefully pick up the dough with your hands and add it into the 9-inch round deep-dish pie pan. Press the dough onto the bottom and sides of your pie pan as evenly as possible. The dough should go all the way up the sides as well. Take a fork and poke holes into the bottom crust. This will prevent the crust from bubbling up during the baking process. From there set the pie pan aside while we prepare the top crust which is coming up in step 7.
Forming the top crust (Part 1)
Step 7-Lightly flour the surface of your table. Add the second half of the dough on top of the table and press down with your hands until the dough is a flat circle. Lightly sprinkle all-purpose flour onto the dough and roll the dough into a 9 or 10-inch round in diameter circle using the rolling pin.
Blueberry filling (Part 2)
Step 8- Stir blueberry filling. From there add it into the pie pan with the prepared bottom crust. Spread the filling around as evenly as possible. Shake the pie pan slightly to make the filling more even.
Forming the top crust (Part 2)
Step 9- Carefully pick up the top pie crust and carefully place it over the filling in the pie pan. Press down on to the filling slightly. Trim off any excessive dough from the top crust using kitchen scissors if the dough exceeds the edge of the pie pan. Seal the top and bottom crust together by taking the tips of your fingers and pressing the top crust onto the inner edge of the pie pan while going all around the pie pan until the entire edge of the crust is sealed.
Final assembly and baking of the cobbler
Preheat oven to 375 degrees.
Step 10- Take a fork and poke holes into the top crust or you can cut a small hole into the middle of the top crust and cut 4 slits into the crust as well. You can also widen the slits by moving the knife back and forth against the sides of each slit. This will allow the steam to escape during the baking process.
Step 11- Mix 1 large egg (Room temp) until combined. Lightly brush a small amount of the egg onto the top crust using a pastry brush. This ensures even browning during the baking process. From there sprinkle a small amount of sugar on top of the crust.
Step 12- Place into a preheated 375-degree oven on the middle rack and bake for 1 hour.
Step 13- Remove the cobbler from the oven and let cool for 2 or 3 hours before serving. For best results serve the next day so the flavors can settle and increase overnight.
