Southern Buttermilk Pie

What you’ll need
Buttermilk (Room temp)
Sweetened Condensed milk (Room temp)
5 Large eggs (Room temp)
All Purpose flour
Sugar
Salt
Unsalted butter
Vegetable Shortening (Butter flavored)
Vanilla extract
Butter extract
Almond extract
Cinnamon
Nutmeg

Tools you’ll need
9-inch round pie pan (Standard)
Rolling pin
Whisk
Hand mixer

Preparation of pie crust
Note- You can make the pie crust days or weeks in advance.
Step 1- Add 2 cups All purpose flour, 3 to 4 tablespoons sugar, 1/8 to 1/4 teaspoon salt, 6 tablespoons unsalted butter (Cold) and 6 tablespoons shortening (Cold) into a food processor. Pulse for 1 to 2 minutes or until the butter and shortening is cut into flour. Transfer flour mixture into large bowl.


Step 2- Add 1/3 cup cold water . Stir with a spoon to combine the flour mixture and the water. Form mixture into a dough using your hands and form into a ball.


Step 3- Lightly flour surface of table. Place dough on top of table. Press dough into a flattened circle with your hands. Add a small amount of flour on to dough and rolling pin. Roll dough into a 15 inch diameter circle.


Step 4- Add a small amount of flour on to dough. Place rolling pin at the edge of the circle of dough and proceed to roll dough on to rolling pin. Make sure you add flour on to the dough as you are rolling the dough on to the rolling pin. This will prevent the dough from sticking to the rolling pin or on to itself.


Step 5-Place rolling pin on to edge of pie pan and carefully unroll the dough from the rolling pin on to the pie pan. Raise the edge of the dough while slightly pressing dough inside the pie pan. Trim off of ends of dough using kitchen scissors. Leave 1 1/2 inches of dough from the edge of pie pan. Once done roll and tuck dough under the edge of pie pan.


Step 6- Place index finger and middle finger on edge of pie shell. Push outward with your right index and middle fingers while pushing inward with your left index finger.


Step 7- Place Pie Shell into Freezer for 1 to 2 hours or until it’s frozen.

Making the Buttermilk pie filling

Step 8- Add 5 large eggs (Room temp), and 1 1/4 cups sugar. Mix with hand mixer for 1 to 2 minutes or until mixture turns pale yellow.


Preheat oven to 375 degrees.
Step 9- Add 1 cup buttermilk (Room temp), 1/2 cup sweetened condensed milk (Room temp), 5 tablespoons melted unsalted butter, 1/4 cup all purpose flour, 1/8 teaspoon salt, 2 teaspoons vanilla extract, 1/2 teaspoon butter extract, 1/8 teaspoon almond extract, 1/2 teaspoon cinnamon, 1/8 teaspoon nutmeg and 1/8 teaspoon all spice. Stir with whisk until combined.


Baking the pie
Note– If you have any issues with your pie turning brown at the top preheat your oven broiler to high and add pie into the broiler and let sit for 30 seconds to 1 minute. Be sure to check constantly to ensure the pie does not over brown.


Step 10- Remove the pie crust from the freezer. Pour buttermilk pie filling into the frozen pie shell. Lightly sprinkle cinnamon or nutmeg on top of filling.


Step 11- Place pie into a preheated 375 degree oven on the middle rack for 1 hour.


Step 12- Remove pie from oven. Let cool for 4 to 6 hours before serving. For best results, serve the very next day so that the flavors will settle and increase overnight.
