What you’ll need
2 1/2 Pounds of beef chuck roast
4 Large eggs
1 lbs. spaghetti
Better than bouillon beef base
Soy Sauce (reduced sodium)
Hot sauce
Seasonings
Onion
Celery
Bell Pepper
Garlic
Green Onion
Zatarains creole seasoning
Chef Paul Prudhomme’s poultry magic
Chef Paul Prudhomme’s seafood magic
Preparation of ingredients
Step 1- Chop a half of a yellow onion, 2 ribs celery, half of a green bell pepper, 2 cloves garlic and a bunch of green onions. Make sure you cut your onion, celery, bell pepper and garlic into medium sized chunks.
Step 2- Chop roast into strips. Chop roast into large slices. Take slices and cut into strips.
Preparing your beef soup base
***Preheat fire to medium high heat***
Step 3- Add 3 Quarts water into a pot. Add 1 cup chopped yellow onion, 1 cup chopped celery, 1 cup chopped green bell pepper and 2 cloves of chopped garlic. Then add 2 teaspoons Zatarain’s creole seasoning, 1 teaspoon of chef Paul Prudhomme’s poultry magic and 1 teaspoon of chef Paul Prudhomme’s seafood magic. Stir then cover with lid. Let come to a simmer. Once simmering starts let it simmer for 15 minutes.
Step 4- Add seasoned liquid mixture into a mesh strainer with a large bowl underneath it. discard seasonings.
***Preheat fire to medium low heat***
Step 5- Add seasoned liquid mixture into your pot. Add 3 teaspoons of beef base one at a time to ensure the beef base dissolves into the seasoned liquid.
Step 6- Add beef strips and stir. Cover with lid and let simmer on medium low heat for 1 hour and 20 minutes. Once done turn fire off and set aside
Boiling your eggs
***Preheat fire to medium high heat***
Step 7- Add 1 1/2 Quarts water into a small pot. Let water get hot.
Step 8- Add 4 large eggs. Let simmer for 30 minutes.
Step 9- Remove eggs and add into a bowl with cold water.
Step 10- Crack each egg on the top and bottom
Step 11- Peel eggs while rinsing them off with cold water. Shell should come off easily.
Preparing your pasta
***Preheat fire to medium high heat***
Step 12- Add 2 1/2 quarts water into a large pot. Add 1/2 teaspoon oil and stir.
Step 13- Break 1 pound of spaghetti in half. Add into pot and stir slightly. Let come to a boil. It should take 7 to 8 minutes for pasta to cook all the way through.
Step 14- After 5 minutes stir and taste your pasta to see if it is at the correct texture. If not let it simmer for 2 additional minutes.
Step 15- Once your pasta is done add it into a strainer and rinse it off with cold water. Once done set aside.
Step 16- In a bowl add your beef soup base, plus 1 1/2 tablespoons soy sauce and 1 teaspoon cayenne pepper. stir Add your noodles and your beef strips.
Step 17- Chop half of a broiled egg and add on top of soup. Sprinkle chopped green onions and serve hot. Enjoy!
