Smothered Turkey Wings and Brown gravy over rice, green peas, and potato salad

What you’ll need
2-pounds turkey wings
All-purpose flour
Sugar
Salted butter
Canola oil
8 ounces frozen organic green peas
Jasmine rice (Long grain rice)
Mayonnaise
Mustard
Sweet relish
3 large eggs
1 russet potato

Seasonings
Sea salt
Tony Chachere’s Creole seasoning
Chef Paul’s Poultry magic
Onion powder
Garlic powder
Cayenne pepper
Dried thyme

Preparation of ingredients
Step 1- Chop 1 yellow onion, 4 stalks celery, 1 Green Bell pepper, and 4 cloves garlic.

Step 2- Rinse, peel and chop 1 russet potato into small cubes. Add 1 quart of water and 1 teaspoon vinegar into a small bowl. Add chopped potatoes. Let sit until it’s ready to be cooked.

Step 3- Rinse turkey wings with cold water. Place turkey wings into a medium sized bowl. Add 1/4 teaspoon salt, 2 teaspoons Tony Chachere’s creole seasoning, 2 teaspoons Chef Paul’s Poultry magic, 2 teaspoons Onion powder, and 2 teaspoons Garlic powder. Coat the seasonings on to the turkey wings using your hands.

Searing the turkey wings
Preheat fire to medium high heat.
Step 4- Add 2 tablespoons salted butter. Add your turkey wings. Let sear for 3 minutes on each side. Once done turn Add turkey wings on to serving dish.

Making the gravy base.
Step 5- Add 1/3 cup canola oil. Let get hot for 2 minutes. Add 1/3 cup all-purpose flour. Stir continuously for 8 minutes or until mixture reaches a brown color. Add 1 cup chopped yellow onion, 2/3 cup chopped celery, 2/3 cup chopped green bell pepper and 1 tablespoon chopped garlic. Stir continuously for 5 minutes.

Step 6- Add 5 cups water, 1/4 teaspoon salt, 1 1/2 teaspoons Tony Chachere’s creole seasoning, 1 1/2 teaspoons Chef Paul’s Poultry magic, 2 teaspoons onion powder, 2 teaspoons garlic powder, 1/2 teaspoon cayenne pepper and 1 teaspoon dried thyme. Stir all ingredients together. Add turkey legs and stir. Cover with lid and let simmer for 1 hour or until turkey wings are tender. If the turkey wings are not tender after 1 hour add 2/3 cup water and let simmer for an additional 20 minutes.

Making the potato salad.
Preheat fire to medium high heat.
Step 7- Add 1 1/2 quarts water and 1 teaspoon salt. Stir and let come to a simmer.

Step 8- Add potato cubes and 3 large eggs. Let simmer for 12 minutes.

Step 9- Remove eggs and place into a small bowl. Add potato cubes into a strainer. Let potatoes cool completely.

Step 10- Crack the bottom and top shell of eggs. Carefully peel shell off of eggs while rinsing eggs off with cold water. Separate the egg yolks from the egg whites. Place egg yolks into a small bowl.

Step 11- Chop egg whites until minced. Smash egg yolks with back of a spoon. Add 1/4 Cup mayonnaise, 2 teaspoons mustard, 1/2 teaspoon Tony Chachere’s creole seasoning, 1/2 teaspoon Onion powder and 1/2 teaspoon garlic powder. Stir all ingredients together until combined.

Step 12- Add Chopped egg yolks, 1/4 Cup chopped yellow onion, 1/4 cup chopped celery, and 1/4 cup relish, into medium sized bowl with potato cubes. Stir all ingredients together.

Step 13- Add egg yolk mixture. Stir all ingredients together. Optional sprinkle 1/4 teaspoon Tony Chachere’s Creole seasoning and 1 teaspoon of fresh parsley on top of potato salad once it is completed. Place in fridge. You can also make this potato salad 1 to 2 days ahead of time.

Cooking the rice
Preheat fire to medium high heat.
Step 14- Bring 1 1/2 quarts of water to a simmer and 1 teaspoon salt. Stir all ingredients together. Add 1 cup rice. Let simmer for 8 minutes. Be sure to check your rice to see if it is at your desired texture.

Step 15- Add your rice into a strainer and rinse off rice with cold water. Set strainer on top of pot and let the rice set for 15 minutes before serving.

Cooking the Green peas
Preheat fire to medium high heat.
Step 16- Add 1 1/3 cups water, 1/3 cup sugar, 1/2 teaspoon salt, 1/2 teaspoon onion powder, 1/4 cup chopped yellow onion and 3 tablespoons salted butter. Stir all ingredients together. Let simmer for 3 minutes.


Step 17- Add 8 ounces of organic frozen green peas. Stir all ingredients together. Let come to a simmer first then let simmer for 5 minutes. Once done turn fire off and let sit for 5 minutes before serving.
