What you’ll need
3 Large to medium sized Sweet Potatoes
Sugar
Brown Sugar
All Purpose Flour
8oz’s of Pecan Halves
Unsalted butter
Evaporated milk
Vanilla Extract
Cinnamon
Nutmeg
All Spice
Tools you’ll need
8×8 inch glass or metal pan
Food Processor
Hand mixer
Potato Peeler (Optional)
Preparation of Sweet Potatoes
***Preheat fire to medium high heat***
Step 1- Add 3 quarts water into a large pot. Let come to a boil.
Step 2- Add Sweet Potatoes. Let boil for 1 hour and 10 minutes.
Step 3- Add Sweet potatoes into an ice water bath. Let sit for 10 minutes.
Step 4- Peel skin off of potatoes. Add them into a medium sized bowl.
Step 5-Mash Sweet Potatoes with a potato masher. Once done you should have 3 to 3 1/2 Cups of mashed sweet potatoes.
Step 6- Remove the strings from the sweet potatoes using a hand mixer. Start by mixing the sweet potatoes. The stings will be collected by the beater blades of the hand mixer. Rinse beater blades off with water and repeat this step 5 times or until all of the strings have been removed from the sweet potatoes.
Making the Filling
Step 7-Add 4 tablespoons melted unsalted butter, 1/4 Cup Evaporated milk, 1/2 Cup Sugar, 1/2 Cup brown sugar, 2 Teaspoons vanilla extract, 1 teaspoon cinnamon, 1/8 teaspoon nutmeg and 1/8 teaspoon all spice. Mix all ingredients together. Scrape down sides of bowl and continue mixing ingredients.
Making the Topping (Food processor required)
Step 8- Add 1 1/3 Cup Pecan halves, 2/3 cup brown sugar, 4 tablespoon salted butter (Room Temperature), 1/4 Cup All Purpose flour, 1 teaspoon cinnamon and 1 teaspoon vanilla extract. Blend all ingredients together or until mixture resembles coarse crumbs.
Assembling and baking your sweet potato casserole
Step 9- Lightly butter the bottom and sides of your baking pan
***Preheat oven to 350 degrees***
Step 10- Add Sweet potato casserole batter into baking pan. Using a spoon spread the batter around your baking pan as evenly as possible. To make the batter more even shake your baking pan slightly.
Step 11- Generously sprinkle all of the topping on top of your sweet potato casserole batter.
Step 12- Place into a preheated 350-degree oven for 45 minutes.
Step 13- Let cool completely before serving. For best results let cool first then place in fridge overnight.
Serve Warm or cold. Enjoy!
