What you’ll need
1 Box 16 ounces of Small Shells
Mayonnaise. (You can also use the FAT FREE version for this recipe)
Ranch Dressing (You can also use the FAT FREE version for this recipe)
Chef Paul Prudhommes Pizza and Pasta magic
Tony Chachere’s Creole Seasoning
Lemon juice
2 Pounds of Fresh Louisiana Shrimp
Bacon
Match stick Carrots
Frozen Peas
Diced Tomatoes (Drained of their juices)
Boiling your pasta
Step 1- In a large pot filled with cold water Add 2 1/2 Cups Small Shells, 2/3 Cup Shredded Carrots, and 2/3 Cup of Frozen Peas. Stir for 10 seconds. Let mixture come to a boil. Once at a boil let simmer for 7 to 8 minutes
Step 2- After 7 to 8 minutes, drain pasta into a strainer and rinse with cold water. Set aside.
Making your bacon bits
Step 3- In a large pan preheated to medium high heat Add 5 to 6 strips of Bacon. Let fry for 5 minutes then flip bacon over to the opposite side. Fry for an additional 5 minutes.
Step 4- Transfer your bacon onto a serving plate lined with napkins. Take more napkins and place on top of bacon and press down slightly. This will remove most of the grease.
Step 5- Place bacon into a food processor. Blend it until it’s crumbly.
Preparing your shrimp
Step 6- In a small pot preheated to medium high heat Add 2 Cups cold water, 2 Teaspoons of Tony Chachere’s Creole seasoning and 1 teaspoon of Lemon Juice. Stir for 10 seconds.
Step 7- Add Shrimp and let simmer for 3 minutes.
Step 8- Strain Shrimp into a strainer and set aside.
Making your Dressing
Step 9- In a small bowl add 2/3 Cup mayonnaise, 1 Cup Ranch dressing and 1 Tablespoon of Chef Paul Prudhomme’s Pizza and Pasta Magic. Mix until well combined.
Assembling your Pasta Salad
Step 10- Add your pasta into a large bowl
Step 11- Add Diced Tomatoes, Bacon Bits and Shrimp. Stir.
It may seem that you are adding too much of dressing BUT the shells will absorb some of the dressing!
Step 12- Add your Dressing and Stir until well combined.
Step 13- Place in fridge for 1 hour before serving. Keep Pasta Salad in fridge at all times. Never leave it out!
