Oyster dressing

What you’ll need
1 loaf French bread
2 pints of raw Oysters in their liquid
Unsalted butter

Seasonings
Onion
Celery
Bell pepper
Garlic
Fresh parsley
Dried Sage
Dried Thyme
Salt
Tony Chachere’s creole seasoning
Chef Paul’s seafood magic
Cayenne pepper
Black pepper
Onion powder
Garlic powder

Tools you’ll need
9×13 inch baking pan
Small casserole dish
11×17 inch baking pan (For french bread)
Mesh strainer

Preparation of ingredients
Step 1- Chop 1 yellow onion, 4 stalks celery, 1 Green bell pepper, 6 cloves garlic, and parsley.

***Preheat oven to 400 degrees***
Step 2- Cut the entire French bread into small bite sized pieces and place into a 11×17 inch baking pan. Bake at 400 degrees for 15 minutes. Let cool completely.

Note- Raw Oysters release their juices naturally as you continue to stir the Oysters.

Step 3-Add Raw Oysters into mesh strainer with a bowl underneath it. Stir continuously for 12 minutes or until you have 2 1/4 cups of Oyster liquor in the bowl.

Step 4- Add Oyster liquor into bowl with bread cubes. Cover with lid and let soak for 5 minutes. After 5 minutes stir the bread for 2 minutes.

Making the Oyster dressing
Step 5- Add 4 tablespoons unsalted butter into a large saucepan. Let butter melt.

Step 6- Add 2 Cups chopped yellow onion, 1 1/2 cups Celery, 1 1/2 cups chopped green bell pepper, and 2 tablespoons chopped garlic. Stir all ingredients together. Let sauté for 15 minutes, stirring every 3 minutes.

Step 7- Add Moistened breadcrumbs and 2 pints raw oysters. Stir all ingredients together.

Step 8- Add 1/4 teaspoon salt, 1 teaspoons Tony Chachere’s creole seasoning, 1 teaspoon Chef Paul’s seafood magic, 1/2 teaspoon Cayenne pepper, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1/2 teaspoon black pepper, 2 teaspoons dried sage, 1 teaspoon dried thyme, and 2 tablespoons fresh parsley. Stir all ingredients together and let simmer for 2 minutes. After 2 minutes turn fire off.

Baking the Oyster dressing
***Preheat oven to 350 degrees***
Step 9- Butter the bottom and sides of your baking pan. Add Oyster dressing into baking pan. Sprinkle breadcrumbs on top.

Step 10- Place into a preheated 350-degree oven for 25 minutes. Remove out of oven and let sit for 5 minutes before serving.
