What you’ll need
1 Pound Louisiana Crawfish tails
1 pound Louisiana boiled Crawfish (Optional)
32fl oz’s Heavy Whipping Cream
Shredded Parmesan cheese
Unsalted butter
1 pound Rotini pasta
Seasonings
Green onion
Garlic
Tony Chachere’s creole seasoning
Chef Paul’s Seafood magic
Cayenne pepper
Preparation of ingredients
Note- Steps 2 and 3 are optional.
Step 1-Chop a bunch of green onion. Chops ends to green onion and 3 cloves of garlic.
Step 2- Separate Crawfish head and tail. Place crawfish head into a separate bowl.
Step 3- Peel first 3 layers of shell off of crawfish tail. Squeeze the back end of the crawfish tail and pull the crawfish tail out. Place crawfish tails into separate bowl along with your 1 pound of Louisiana crawfish tails.
Boiling your pasta
***Preheat fire to medium high heat***
Step 4- Add 2 1/2 Quarts water into large pot. Let come to a simmer
Step 5- Add 1/2 pound of Rotini pasta and stir. Let simmer for 8 minutes.
Step 6- Add pasta into strainer and rinse with cold water.
Making the pasta sauce
***Preheat fire to medium high heat***
Step 7- Add 3 tablespoons unsalted butter into a large saucepan. Let butter melt.
Step 8- Add 1/2 Cup chopped green onion ends, 1/2 Cup chopped green onion and 1 tablespoon of chopped garlic. Stir all ingredients together. Let sauté for 4 minutes.
Step 9- Add 1 teaspoon of Tony Chachere’s creole seasoning, 1 teaspoon of Chef Paul Prudhomme’s seafood magic and 1 teaspoon cayenne pepper. Stir all ingredients together.
Step 10- Add 3 cups heavy whipping cream and the crawfish heads (Optional). Stir all ingredients together. Let simmer for 4 minutes. After 4 minutes remove Crawfish heads.
***Turn your fire down from medium high to medium low heat***
Step 11- Add 1/2 Cup Shredded Parmesan cheese and 1 pound of Crawfish tails. Stir all ingredients together. Cover and let simmer for 5 minutes.
Step 12- Turn fire off and add 1/2 pound of cooked Rotini pasta. Fold the pasta into the sauce. Let sit for 10 minutes before serving. Enjoy!
Quick tip-Your pasta sauce will thicken as it cools.
