Shrimp lo mein

6 to 8 servings

What you’ll need
2 pounds fresh shrimp and have been peeled, cleaned and deveined.
10- or 12-ounces Lo mein egg noodles
Large eggs (Room temp)
Soy or green beans
Bean sprouts
Matchstick carrots
Fresh ginger
Soy sauce
Oyster sauce
Rice cooking wine (Sweet)
Vegetable or canola oil
Sesame seed oil
Cornstarch

Seasonings
1 yellow onion
Green onion
Garlic
Salt
Black pepper
Tony Chachere’s creole seasoning

Preparation of ingredients
Seasonings

Step 1- Chop 1/2 of a yellow onion, 4 or 5 ounces in weight green onion (Including the ends) and press 3 cloves garlic with garlic press.


Ginger
Step 2- Peel 0.5 ounces in weight of fresh ginger with a potato peeler. Chop fine with a knife and set aside.


Lo mein sauce
Step 3- Add 2 tablespoons sweet rice cooking wine, 1 and 1/2 tablespoons soy sauce, 1 and 1/2 tablespoons oyster sauce, 1 tablespoon water, and 1/2 teaspoon cornstarch. Stir all ingredients together with a whisk until combined and set aside.


Lo mein egg noodles
Preheat fire to medium heat.
Step 4- Add 5 quarts water into a large pot and bring to a boil. Add 10 or 12 ounces in weight of the lo mein egg noodles into the pot. Let simmer for 1 minute. Stir all ingredients. From there let it simmer for 4 minutes stirring occasionally.


Step 5- Drain into a large mesh strainer and let cool completely. You can also make these 1 or 2 days in advance.


Assembling the cooking the lo mein
Preheat fire to medium heat.
Step 6- Let a large saucepan get hot for 2 minutes. Add 2 tablespoons vegetable or canola oil into saucepan. Spread around the saucepan. Let get hot for 30 seconds.


Step 7- Add 3 large eggs (beaten). Stir continuously for 30 seconds. Add 2/3 cup chopped yellow onion and 1/2 or 2/3 cup chopped green onion ends. Stir all ingredients continuously for 2 minutes.


Step 8- Add 3 cloves pressed garlic, 2/3 cup bean sprouts, 3 ounces in weight matchstick carrots, and 6 ounces in weight of soybeans. Let sauté for 2 minutes stirring occasionally.


Step 9- Add shrimp tails, 1/4 teaspoon salt, 1/4 teaspoon black pepper, and 1/2 teaspoon Tony Chachere’s creole seasoning. Stir all ingredients together. Let sauté for 2 minutes stirring occasionally.


Step 10- Add 1 tablespoon chopped ginger, and your lo mein sauce. Stir all ingredients together. Let simmer for 2 minutes stirring occasionally.


Step 11- Add your lo mein noodles (The entire thing), and 1 or 2 tablespoons sesame seed oil. Stir all ingredients together. Let sauté for 2 minutes stirring occasionally. Once the cooking time has ended, turn your fire off. Let cool for 10 minutes.


Step 12- Add 1/2 or 2/3 cup chopped green onions as a final garnish. Stir all ingredients together. Let cool for an additional 5 minutes. That’s 15 minutes total cooling time before serving. For best results, serve this the next day so the flavors can settle and increase overnight.
