What you’ll need
2 pounds of Louisiana shrimp (Small or medium sized)
Cooked Jasmine rice
2 Large eggs
Sesame seed oil
Lite Soy sauce (Reduced sodium)
Seasonings
Green onion
Garlic
Salt
Tony Chachere’s creole seasoning
Black pepper
Preparation of ingredients
Step 1- Chop green onion and green onion ends. Chop 2 cloves garlic until minced.
Step 2- Separate head from shell of shrimp. Place shrimp head into bowl. Peel shell off of shrimp tail. Place shrimp tail into separate bowl.
Step 3- Cut out the back of the shrimp tail using a sharp knife. Pull black string out.
Step 4- Place shrimp tails into strainer and rinse with cold water.
Making the Shrimp Fried Rice.
Note- The cooked Jasmine rice noted in the ingredients, is equivalent of 1 cup of uncooked Jasmine rice.
***Preheat fire to medium high heat***
Step 5- Add 1 1/2 Tablespoons of Sesame seed oil into large saucepan. Let get hot for 1 minute.
Step 6- Add 2 Large eggs. Stir all ingredients together.
Step 7- Add 1/2 Cup Chopped Green onion ends, 1/2 cup of chopped green onion and 1 tablespoon of chopped garlic. Stir all ingredients together. Let sauté for 3 minutes.
Step 8- Add Shrimp. Stir all ingredients together. Let sauté for 2 minutes.
Step 9- Add 4 cups rice, 1 teaspoon of sesame seed oil and 2 tablespoons Soy sauce. Stir all ingredients together. Let sauté for 2 minutes. After 2 minutes turn fire off. Let sit for 10 minutes before serving.
