Makes 15 buttermilk drops

What you’ll need
All-purpose flour
Baking powder
Baking soda
Sugar
Salt
Unsweetened Cocoa powder
Unsalted butter
1 large egg (Room temp)
Buttermilk (Room temp)
Whole milk (Room temp)
Cream cheese (Room temp)
Vanilla extract
Butter extract
Confectioners’ sugar
Canola oil
Red Gel paste or liquid food coloring
Vinegar

Cooling rack or serving dish lined with napkins
Ice cream scoop
Whisk
Tongs
Preparation of ingredients
Preheat fire to medium high heat
Note- Make sure your cooling rack or serving dish lined with napkins ready.
Step 1- Add canola oil into a medium sized pot. Let get hot for 12 minutes.
Deep fryer- Preheat to 350 to 375 degrees. You may need more canola oil for frying. Let get hot for 15 or more minutes.
Dry ingredients
Step 1- Sift 1 1/4 cups All-purpose flour, 1 teaspoon baking powder, 1/4 cup unsweetened cocoa powder, 1/2 cup sugar and 1/8 teaspoon salt into a medium sized bowl. Stir until combined. Set aside.
Wet ingredients
Step 2- Add 1/2 cup of Buttermilk (Room temp), 2 to 3 tablespoons whole milk (Room temp), 3 tablespoons melted unsalted butter, 1 large egg (Room temp), 2 teaspoons vanilla extract, 2 teaspoons butter extract, and 1 tablespoon Red gel paste or liquid food coloring. Stir with whisk until combined. Set aside.
Step 3- Pour wet ingredients into dry ingredients. Stir with spoon until combined. In a very small bowl add 1/2 teaspoon baking soda and 1/2 teaspoon vinegar. Once done add into batter and stir with spoon until combined.
Frying buttermilk drops
Notes –Glide the bottom of ice cream scoop onto the edge of bowl. This will prevent the batter from being added to the hot oil prematurely. Fry 4 to 5 buttermilk drops at a time.
Step 4- Scoop up 2 1/2 to 3 tablespoons batter with an ice cream scoop. Quickly add into hot oil. Use spoon to push the thick batter into hot oil. Let fry for 3 to 4 minutes of each side.
Step 5- Remove buttermilk drops from hot oil. Transfer them onto cooling rack or serving dish lined with napkins. Let cool completely before icing.
Making the Cream cheese icing
Step 6- Add 1 1/2 cups confectioners sugar, 4 ounces cream cheese (Room temp), 2 tablespoons melted unsalted butter, 2 teaspoons vanilla extract and 1/2 teaspoon butter extract. Stir with whisk until cream and smooth. Icing will be pretty thick. Place into microwave for 20 seconds and stir.
Step 7- Add 1 to 3 buttermilk drops into icing. Coat buttermilk drops with icing using a spoon. Remove buttermilk drops with tongs. Shake each buttermilk drop to remove some of the icing as you only need a thin coating of icing. Place buttermilk drops back onto cooling rack. Let icing set for 15 minutes.
