What you’ll need
2 pounds Red Kidney beans
2 to 3 pounds pickle meat or smoked meat
2 pounds Manda or D&D Smoked sausage
Salted butter
Seasonings
1 yellow onion chopped
3 to 4 stalks celery chopped
2 bunches green onions chopped
2 green bell peppers chopped
3 to 4 cloves garlic chopped
Parsley finely chopped
Bay leaves
Tony Chachere’s creole seasoning
Chef Paul’s Poultry magic
Onion powder
Garlic powder
Preparing and soaking Red beans
Step 1-Make sure you chop and prepare all of your meats and seasonings before proceeding to the next step.
Step 2- Place beans in your hands and sort beans. Remove any broken or discolored beans and add beans into a large pot. Fill pot with 16 to 20 cups cold water. Cover with lid and let soak overnight or 6 to 8 hours.
Boiling Pickle meat
Preheat fire to medium high heat.
Step 2- Add pickle meat and 2 quarts water into large pot. Cover and let simmer for 1 hour. Remove pickle meat and place into bowl. Reserve pork fat. If you are using smoked meat skip to step 3.

Step 3- Bring Red beans to a simmer. Add chopped yellow onion, chopped green onions, chopped celery, chopped green bell pepper, chopped garlic, chopped parsley, bay leaves, Tony Chachere’s creole seasoning, Chef Paul Prudhommes poultry magic, onion powder, garlic powder, and add pickle meat. Stir and let simmer for 30 minutes, stirring occasionally. Make sure you season to taste.
Step 4- Add 1/2 cup salted pork stock. Taste beans to see if it’s at your desired taste. If not, add a small amount of Tony Chachere’s creole seasoning and Chef Paul’s Poultry magic and stir. Cover with lid and let simmer for 30 minutes.
Step 5- Taste beans to see if it’s at your desired taste. If not, add a small amount of Tony Chachere’s creole seasoning and Chef Paul’s poultry magic and stir. Add smoked sausage and stir. Cover with lid and let simmer for 7 to 15 minutes.
Step 6- Turn fire off and add 6 tablespoons salted butter. Once butter has melted in pot stir and let cool for 10 to 30 minutes before serving. Beans with thicken as it cools.
