What you’ll need
1 Pound Navy (Pea) Beans
Tomato Paste (No salt added)
Vinegar
Sugar
Salted or Unsalted butter
3/4-to-1-pound Cured pork salt or Pork jowl bacon
Long grain rice (Jasmine)
Seasonings
1 yellow onion
Salt
Tony Chachere’s creole seasoning
Onion powder
Garlic powder
Preparation of Ingredients
Step 1- Chop half of a yellow onion, 3/4 to 1 pound Salt pork or Pork jowl bacon, and 1 pound D&D smoked sausage.
Preparing and soaking the beans
Step 2- Add a small amount of Navy beans into a wide bowl. Sort beans with your hands. Remove any broken or discolored beans. Once done transfer beans into a large pot.
Step 3- Add 10 cups water into large pot. Stir and cover with lid. Let beans soak for 5 hours.
Cooking the Rice
Preheat fire to medium high heat
Step 4- Add 2 quarts water into a medium sized pot. Stir and let come to a simmer.
Step 5- Add 2 cups rice and stir. Let simmer for 8 minutes. Add rice into a mesh strainer. Rinse with cold water. Let sit for 30 minutes.
Sauteing the Salt pork and Smoked sausage
Preheat fire to medium high heat
Step 6- Add salt pork and stir. Let saute for 10 minutes stirring occasionally. Add 2/3 cup chopped yellow onion, and smoked sausage. Stir and let saute for 3 to 4 minutes. Turn fire off and let sit.
Making the Tomato sauce mixture
Step 7- Add 1/4 cup Tomato paste (No salt added), 1 cup water, 2 tablespoons vinegar, 1/2 teaspoon salt, 1/2 teaspoon Tony Chachere’s creole seasoning, 1 1/2 teaspoons onion powder, 1 1/2 teaspoons garlic powder, and 1 cup sugar. Mix with whisk until combined. Set aside.
Cooking the Pork and Beans
Preheat fire to medium high heat
Step 8- Bring pot of beans to a simmer. Let simmer for 45 minutes or until beans are tender.
Step 9- Add Tomato sauce mixture and salt pork and smoked sausage. Stir all ingredients together. Cover with lid and let simmer for 45 minutes stirring occasionally. Let cool for 10 minutes before serving.
Tips- Beans will thicken as it cools. For best results, serve the next day so flavors can settle and increase overnight.
