Spicy Chicken Sandwich

Makes 2 sandwiches

What you’ll need
17-ounce package of Premium thin sliced Chicken breasts
For the batter
All-purpose flour
Eggs
Vegetable oil or canola
Seasoning
Tony Chachere’s Creole Seasoning
Chef Paul Prudhomme’s Poultry Magic
Cayenne Pepper

TO DRESS YOUR SANDWICH
Hamburger Buns
Salted Butter
Fresh Romaine Lettuce (Cleaned)
Fresh Tomato (Sliced)
Pepper Jack cheese (Optional)
Mayonnaise
Ketchup
Barbecue sauce (Optional)

Preparation of ingredients

Step 1- Clean and chop Romaine lettuce. Chop tomatoes into 2/16ths of an inch thick.

Step 2 Remove Chicken from package and place in a strainer. Rinse with cold water.

Step 3 Take chicken strips and place on chopping board. Cut to the length of the hamburger bun and place in a bowl.

Step 4 Add 1 teaspoon Tony Chachere’s creole seasoning and 1 teaspoon of chef Paul Prudhommes poultry magic onto both sides on chicken breasts. Rub seasonings on to the chicken breasts.

Step 5 Add 1 teaspoon of Cayenne Pepper onto both sides of chicken.

Step 6 Cover bowl and place into fridge for about 1 hour.

Step 7 After 1 hour remove bowl from fridge and set aside.

Step 8 In a medium sized bowl add 2 large eggs. Add 1 teaspoon of Tony Chachere’s creole seasoning and mix.

Step 9. In a separate bowl Add 2 cups of All-purpose flour, 2 tablespoons of Tony Chachere’s Creole Seasoning and 2 Tablespoons of Cayenne Pepper. Mix until Well Combined. Set aside.

Preheat fire to medium high heat

Step 10 Add 3 cups of vegetable or canola oil to pot. Let get hot for 8 minutes.

PREPARE CHICKEN FOR FRYING

Step 11 Take chicken breasts and place into egg mixture. Make sure egg mixture is fully coated onto the chicken

Step 12 Place Chicken into flour mixture. Cover bowl and shake to coat the chicken with flour.

Step 13 Place chicken into Oil and let chicken fry for about 3 to 4 minutes.

Step 14 Remove Chicken from oil and place onto a plate lined with lots of paper towels.

Step 15 Sprinkle 1 teaspoon cayenne pepper on to each side of chicken breast.

TOAST HAMBURGER BUNS

Step 16 In a medium sized skillet Preheat fire to medium high heat. Add 1 teaspoon of butter. Smear butter around pan to coat entire bottom of pan with butter.

Step 17 Add the first half of the hamburger bun into pan. Let sit for about 1 to 2 minutes. NOTE: Press down lightly with a spatula to make sure the bun is toasted all around the bottom surface.

Step 18 After 1 or 2 minutes remove bun from pan and turn your fire on your pan all the way down.

Step 19 Add 1 teaspoon of butter. Smear butter around pan to coat entire bottom of pan with butter.

Step 20 Add the second half of the hamburger bun into pan. Let sit for about 1 minute. NOTE: The second Hamburger bun will take less time to toast. Press down lightly with a spatula to make sure the bun is toasted all around the bottom surface.

Step 21 After 1 minute remove Hamburger bun from pan.

ASSEMBLE YOUR CHICKEN SANDWICH
Step 22 Add the bottom of your hamburger bun to the top of your serving plate.

Step 22 Add your chicken breast. On top of that Add cheese if you like. (AGAIN cheese is optional)

Step 23 Add Romaine Lettuce and Sliced Tomatoes on top.

Step 24 Add Mayonnaise and ketchup to the bottom part of the top portion of your hamburger bun. (You can omit the ketchup and add barbecue sauce if you like, or you can add both onto the hamburger bun)

Step 25 Place top portion of hamburger bun onto the rest of the sandwich

Step 26 Serve with French fries and enjoy!
