What you’ll need
2 to 3 pounds of fresh Louisiana shrimp
22oz box of seasoned Louisiana fish fry
1 loaf of baguette style New Orleans French bread
Large eggs
Canola or vegetable oil
Lettuce Romaine or iceberg
1 large tomato
Sliced pickles
Mayonnaise
Ketchup
Crystal Louisiana hot sauce
Seasonings
Sea Salt
Tony Chachere’s Creole Seasoning
Chef Paul Prudhomme’s seafood magic
Cayenne Pepper (Optional)
Preparation of ingredients
Step 1- Remove shrimp heads and shells. Place into bowl. Add shrimp tails into separate bowl.
Step 2- Cut the back of each shrimp using a sharp knife and remove the black string that is inside the back of the shrimp.
Step 3- Rinse Shrimp off thoroughly with cold water
Step 4- Remove stem out of Romaine lettuce and bunch leaves together. Chop lettuce.
Step 5- Rinse off tomato with cold water and cut 4 thin slices off of tomato.
Step 6- Add entire package of Louisiana fish fry into a container with lid. Season with 1/2 teaspoon of Tony Chachere’s creole seasoning, 1/2 teaspoon chef Paul Prudhomme’s seafood magic and 1/2 Teaspoon Cayenne pepper (Optional) Stir all ingredients together.
Step 7- In a medium sized bowl add 3 large eggs and whisk together with fork.
***Preheat fire to medium high heat***
***If you are using a deep fryer preheat to 350 degrees***
Step 8- Add oil into pot or deep fryer and let get hot for 6 to 7 minutes.
Step 9- Take a handful of shrimps, add into egg. Once done add shrimp into seasoned Louisiana fish fry.
Step 10- Add shrimp into hot oil. let fry for 3 minutes. Once 3 minutes is up remove shrimp out of hot oil and place on to serving dish lined with napkins.
***If you want to fry your French fries follow step 11 then add French fries into hot oil and let fry for 4 to 5 minutes or until the fries are a slight golden-brown color. ***
***If baking your French fries preheat oven to 400 degrees***
Step 11- Add one quarter pound of the French fries into large bowl. Sprinkle with sea salt and toss fries with your hands.
Step 12- Add French fries into baking dish and spread them out in your pan as evenly as possible.
Step 13- Place in a preheated 400-degree oven and bake for 10 minutes. Once done remove French fries out of oven.
Step 14- Cut a 12-inch (1 foot) slice of French bread. Turn bread on its side and cut down the center of the bread. Gently open the bread exposing the insides.
Optional Step- Brush melted salted or unsalted butter onto both slices of French bread
Step 15- Place French bread in to baking dish.
Step 16- Place into a preheated 400-degree oven for 3 to 4 minutes. Once done remove French bread out of oven. Let cool completely
***Dress your Po-boy***
Step 17- Add Mayonnaise and ketchup on top on one slice of French bread.
Step 18- Add Shrimp on the other slice of French bread. You can also add the Louisiana hot sauce on top of the shrimp if you like.
Step 19- Add lettuce, tomato, and pickles on to the slice that has the mayonnaise and ketchup on it.
Step 20- Add the slice of French bread that is dressed on top of the slice of French bread that has the shrimp on it.
Serve Po-boy with hot fries and enjoy! Don’t forget the hot sauce!
