What you’ll need
1 pound Catfish fillets
All purpose flour
Yellow Cornmeal
Canola Oil
Eggs
Romaine Lettuce
Tomato
Mayonnaise
Ketchup
Tartar sauce
1 loaf french bread
28 ounces of french fries
Seasonings
Salt
Tony chachere’s creole seasoning
Chef Paul’s seafood magic
Tools you’ll need
11×17 inch baking pan
Preparation of ingredients
Step 1- Rinse Catfish with cold water. Transfer catfish into a large bowl.
Step 2- Add 1 teaspoon Tony Chachere’s Creole Seasoning, 1 teaspoon chef paul prudhomme’s seafood magic. Coat seasonings into catfish. Place in the fridge for 30 minutes,
Step 3-Add 1 1/2 Cups Cornmeal, 1 1/2 Cups All Purpose flour, 2 teaspoons salt, 1 tablespoon tony chachere’s creole seasoning and 2 teaspoons chef paul prudhommes seafood magic. Stir all ingredients together.
Step 4- In a separate bowl Add 2 large eggs and 1 teaspoon of Tony chachere’s creole seasoning. Stir all ingredients together.
Step 5- Chop Romaine lettuce. Add into strainer and rinse with cold water. Set aside. Rinse tomato then proceed to chop tomato into thin slices.
***Preheat your fire to medium high heat***
Step 6-Add 3 Cups oil into your cast iron skillet. Let get hot for 8 minutes.
Step 7- Take each individual catfish fillet and add into your seasoned egg mixture. Make sure catfish is well coated with the egg mixture.
Step 8- Transfer Catfish fillet into your batter. Shake the bowl to ensure catfish is well coated with the batter.
Step 9- Transfer Catfish into pan. Let fry for 2 minutes.
Step 10- After 2 minutes flip catfish over. Let fry for 2 minutes.
Step 11- After 4 minutes total of frying transfer catfish onto serving dish lined with napkins. Let cool for about 5 minutes.
Preparing the french bread
***Preheat oven to 400 degrees***
Step 12- Cut a 12 inch (1 foot) slice of french bread. Turn bread on it’s side and cut down the center of the bread. Gently open the bread exposing the insides.
Optional Step– Brush melted salted or unsalted butter onto both slices of french bread
Step 13- Place french bread in to baking dish.
Step 14- Place into a preheated 400 degree oven for 5 minutes. Once done remove french bread out of oven. Let cool completely.
Baking the French fries
Step 15- Add 2 teaspoons of canola oil. Spread the oil around your baking pan.
Step 16- Add 2 pounds of fries into baking pan. Spread fries around your baking pan as evenly as possible. Add 1/2 teaspoon of salt (Optional)
Step 17- Place into a preheated 400 degree oven for 25 minutes. After baking serve hot.
***Dress your Po-boy***
Step 18- Add Mayonnaise, Tatar sauce and ketchup on top on one slice of french bread.
Step 19- Add 2 catfish fillets on the other slice of french bread.
Step 20- Add lettuce and tomato on top of the catfish.
Step 21- Place top portion of french bread on top of the bottom portion of french bread. Press down slightly.
Serve Po-boy with hot fries and enjoy! Don’t forget the hot sauce!
