Preparation of ingredients
Step 1- Separate 4 egg yolks from 4 egg whites. Place egg whites into one bowl and egg yolks into a separate medium sized bowl.
Step 2- Add peach slices into mesh strainer with a small bowl underneath it. Reserve peach juice. Cut peach slices into small or medium-sized pieces and set aside.
Step 3- Add 2/3 cup sugar and 1/8 teaspoon salt into medium-sized bowl with egg yolks. Stir vigorously for 30 seconds to 1 minute or until mixture is a pale-yellow color and set aside
Making the custard mixture
Preheat fire to medium heat.
Step 4- Add 2 cups heavy whipping cream, 1/2 cup whole milk and 1/2 cup peach juice into a medium-sized pot. Stir and let get hot for 3 to 4 minutes.
Step 5- Pour hot milk and cream mixture into the egg yolk mixture while stirring with a whisk. This will prevent the eggs from turning into scrambled eggs.
Preheat fire to medium low heat.
Step 6- Pour custard mixture back into a medium-sized pot. Stir continuously for 6 to 7 minutes or until mixture thickens.
Step 7- Pour custard mixture into a mesh strainer with a medium-sized bowl underneath it. If the strainer has lots of egg particles and the custard has a strong eggy smell, you overcooked the custard and will have to start over.
Step 8- Add 1 tablespoon vanilla extract and stir until combined. Carefully add plastic wrap on top of the custard. This will prevent the skin for forming on top of the custard. Cover with lid and place into fridge for 6 to 8 hours or overnight.
Making the ice cream
Note- Make sure you freeze your ice cream maker base for 24 to 48 hours or according to your ice cream maker’s instructional manual, before you make your ice cream.
Step 9- Pour custard mixture into ice cream maker base and let churn for 30 minutes. At the 10-minute mark, add peach pieces and let churn for 20 minutes.
Step 10- Add ice cream from the agitator and the ice cream maker base into a medium-sized bowl. Cover with lid and place into freezer for 2 hours if you want soft serve ice cream and 6 to 8 hours or overnight if you want a harder firmer textured ice cream.
