What you’ll need
All-purpose flour
Baking powder
Salt
Sugar
Brown sugar
Unsalted butter (Room temp)
Heavy whipping cream (Room temp)
Large eggs (Room temp)
2 cans Sliced peaches
Vanilla extract
Butter extract
Cinnamon
All spice
Tools you’ll need
9 x 13-inch glass or metal pan
Hand or stand mixer
Mesh strainer
Spatula
Preparation of ingredients
Peaches
Step 1- Add contents of 2 cans of sliced peaches into a mesh strainer with a small bowl underneath it. Reserve the peach juice and cut each slice of peach in half and set aside.
Dry ingredients (All Purpose flour mixture)
Step 2- Sift 2 1/2 cups all-purpose flour, 1 to 2 teaspoons baking powder and 1/4 teaspoon salt into a medium sized bowl. Stir all ingredients together and set aside.
Wet ingredients (Peach/cream mixture)
Step 3- Add 1/2 cup heavy whipping cream (Room temp), 1/2 cup Peach juice (Room temp), 2 teaspoons vanilla extract and 2 teaspoons butter extract. If you want a thinner cake batter, add 3 tablespoons warm water and stir all ingredients together and set aside.
Preparation of cake batter
Step 4- Add 2 sticks unsalted butter (softened and at room temp), 2 cups sugar and 1/3 cup brown sugar. Mix on high speed for 5 minutes. Stop mixer and scrape down sides of bowl during mixing process.
Step 5- Add 4 large eggs (Room temp) one at a time while mixing on a medium speed. Careful not to over mix the batter after adding the eggs. Only mix on a medium low or low speed until incorporated.
Step 6- Add All-purpose flour and peach cream mixture into the batter 3 separate times and mix on a medium low or low speed until incorporated. Make sure you scrape down sides of bowl each time as well.
Cinnamon/All spice mixture
Step 7- Add 2 teaspoons cinnamon and 1/4 teaspoon All spice. Stir and set aside.
Assembling the topping
Step 8- Add 4 to 6 tablespoons melted unsalted butter into baking pan. Spread around as even as possible. Sprinkle brown sugar on top of butter mixture and use spatula to spread sugar around the baking pan.
Step 9- Lightly sprinkle cinnamon/All spice mixture on top of sugar followed by the sliced peaches. Once done sprinkle more of the cinnamon all spice mixture on top of the peaches.
Preheat oven to 325 degrees
Step 10- Add cake batter into baking pan covering the entire topping. Use spatula to spread batter around as even as possible. Shake and tap pan slightly to make batter more even.
Step 11- Place into a preheated 325-degree oven on bottom rack for 50 minutes to an hour. Once done remove cake from oven. Let cake cool for 3 to 4 hours before removing it out of pan. Once the cake has cooled flip on to cake pad and let the pan sit on the cake pad for 1 to 2 minutes. This will allow time for the cake to come out of the baking pan.
Troubleshoot- If cake doesn’t come out of pan preheat oven to 350 degrees. Place cake back into oven for 1 to 2 minutes. From there remove cake out of oven and let cool for 5 minutes. Flip cake over on to a cake pad and let the pan sit for 2 minutes. This will give the cake enough time to come out of the baking pan.
