What you’ll need
4-to-8-pound Pork Spareribs
Unsalted butter
Tomato paste (No salt added)
Vinegar
Molasses
Sugar
Brown sugar
Honey
Hickory liquid smoke
Mesquite liquid smoke
Seasonings
Salt
Tony Chachere’s creole seasoning
Chef Paul’s Pork and veal magic
Cayenne pepper
Mesquite seasoning
Tools you’ll need
11 x 17-inch baking pan
Aluminum foil
Pastry brush
Preparation of ingredients
Cleaning and marinating the ribs
Step 1- Rinse ribs off with cold water. Peel membrane off of the back of the ribs. Pat ribs dry with napkins. Place ribs into 11 x 17-inch baking pan.
Step 2- Brush both sides of ribs with the Mesquite liquid smoke using a pastry brush.
Step 3- Lightly sprinkle both sides of ribs with Mesquite seasoning, Salt, Tony Chachere’s creole seasoning, Chef Paul’s Pork and Veal magic, cayenne pepper (Optional), and Sugar. Cover pan with ribs with aluminum foil and place into fridge and let marinate for 1 hour or overnight.
Barbecue sauce
Step 4- Add 6 ounce can tomato paste (No salt added), 2 tablespoons vinegar, 1 tablespoon Hickory liquid smoke, 1 tablespoon Mesquite liquid smoke, 2 tablespoons Molasses, 2 tablespoons honey, 2 tablespoons Sugar, 3 tablespoons brown sugar, 1/2 teaspoon salt, 1/2 teaspoon Tony Chachere’s creole seasoning, and 1/4 or 1/2 teaspoon Cayenne pepper (Optional) into a medium sized bowl. Stir with whisk until combined and set bowl aside.
Baking the ribs
Preheat oven to 350 degrees.
Step 5- Cut 2 tablespoons unsalted butter into cubes. Add butter cubes into baking pan with ribs and cover pan with aluminum foil. Polk holes into Aluminum foil using a fork. This will allow the steam to escape during the baking process. Place ribs into a preheated 350 degree oven for 3 hours or until ribs are tender.
Step 6- Remove ribs from oven. Place ribs onto serving plate. Drain pan juices into a small bowl. Add aluminum foil into baking pan. Make sure you use the same foil you covered the pan with.
Set oven broiler to high
Step 7- Add ribs onto aluminum foil. Brush both sides of ribs with the Homemade Barbecue sauce using a pastry brush. Place into oven broiler for 2 to 3 minutes on each side. Remove ribs from oven and let cool for 5 to 10 minutes before serving.
