Meat Sauce and Spaghetti

What you’ll need
2 1/2 pounds Ground beef
12 ounces Tomato paste or 24 to 30 ounces tomato sauce (No salt added)
Salted or unsalted butter
Sugar
Parmesan cheese
1 pound Spaghetti

Seasonings
1 Yellow onion
1 pod Garlic
Fresh basil
Fresh Oregano
Fresh Thyme
Fresh Parsley
Bay leaves
Salt
Tony Chachere’s creole seasoning
Chef Paul’s Poultry magic
Onion powder
Garlic powder

Preparation of ingredients
Step 1- Rinse Thyme, Basil, Oregano, and Parsley. Chop 1 yellow onion, and 5 cloves garlic.

Step 2- Remove stems off of Thyme and chop stems off of parsley. Chop thyme (1 tablespoon), Oregano, Basil, and a small bunch of parsley very fine. Set aside.

Making the tomato sauce and cooking the ground beef
Step 3-Add 12 ounces 1 1/2 cups Tomato paste (No salt added), and 1 2/3 cups water into a medium sized bowl. Stir with whisk until combined.

Preheat fire to medium high heat.

Step 4- Add 2 1/2 pounds Ground beef into a large saucepan. Let sauté for 10 minutes stirring occasionally. Tip- Take spatula and break down the large chunks ground beef.

Step 5- Add Ground beef into a mesh strainer with a medium sized bowl underneath it. Reserve the ground beef drippings. Set aside.

Making the Meat Sauce
Preheat fire to medium high heat.
Step 6- Add 4 tablespoons Unsalted butter, 3 tablespoons Ground beef meat drippings, 1 1/4 cups chopped yellow onion and 1 tablespoon chopped garlic. Stir and let sauté for 6 minutes stirring occasionally.

Step 7- Add Ground beef, 3 1/2 cups tomato sauce, 1/2 teaspoon salt, 1 teaspoon Tony Chachere’s creole seasoning, 1 teaspoon Chef Paul’s Poultry magic, 2 teaspoons Onion powder, 2 teaspoons Garlic powder, 2 Tablespoons Sugar, 2 tablespoons fresh basil, 1 teaspoon fresh thyme, 1 1/2 tablespoons fresh oregano, 1 tablespoon fresh parsley and 3 bay leaves. Stir all ingredients together. Cover with lid and let simmer for 10 minutes stirring occasionally. Let cool for 5 minutes before serving.

Making the Garlic Parmesan Spaghetti
Preheat fire to medium high heat.
Step 8- Add 2 quarts water into a large pot. Let come to a simmer. Add Spaghetti and stir. You can break the spaghetti or add it whole into the pot. Let simmer for 8 to 10 minutes.

Step 9- Add spaghetti into a strainer. Rinse with cold water. Return strainer on top of pot and cover with lid. Let set for 20 to 30 minutes before proceeding to the next step.

Step 10- In a food processor, add 4 tablespoons unsalted or salted butter, 1 tablespoon chopped garlic and 1 tablespoon chopped onion. Blend for 1 minute or until mixture forms a paste.

Preheat fire to medium high heat.
Step 11- Add Garlic/Onion paste into a large pot. Stir while the paste is melting. Let sauté for 1 minute. Turn fire off and add Spaghetti. Stir until the spaghetti is coated with the butter. You can also add more butter if you like.

Step 12- Add 1/4 teaspoon salt (Omit salt if you are using salted butter), 2 teaspoons onion powder, 2 teaspoons garlic powder, 3 tablespoons Parmesan cheese, 1/4 teaspoon thyme, 1/4 teaspoon oregano, 1/4 teaspoon basil and 2 tablespoons fresh parsley. Stir all ingredients together. Meal is complete.
