Macaroni and Cheese with Shrimp (Velvetta Version)

What you’ll need
3 Pounds fresh Louisiana shrimp
2 pounds elbow macaroni
16 oz’s Velvetta cheese (Room temp)
8oz’s Shredded mild cheddar cheese
16oz’s Heavy whipping cream (Room temp)
Unsalted butter

Seasonings
Salt
Tony Chachere’s creole seasoning (Optional)
Chef Paul’s seafood magic (Optional)

Preparation of ingredients
Peeling, Cleaning and deveining shrimp.
Step 1- Separate head from shell of shrimp. Place shrimp head into bowl. Peel shell off of shrimp tail. Place shrimp tail into separate bowl.

Step 2- Cut out the back of the shrimp tail using a sharp knife. Pull black string out.

Step 3- Place shrimp tails into strainer and rinse with cold water.

Step 4- Cut 16oz’s Velvetta cheese into medium sized cubes. Set aside.

***Preheat fire to medium high heat***
Boiling macaroni
Step 5- Add 3 1/2 Quarts of water into large pot. Let come to a simmer.

Step 6- Add 1 pound and 6 ounces of elbow macaroni into pot and stir. Let simmer for 8 minutes.

Step 7- Add elbow macaroni into a strainer. Rinse off with cold water and set aside.

Making the cheese sauce
***Preheat fire to medium high heat***
Step 8-Add 16 ounces of heavy whipping cream and 3 tablespoons unsalted butter. Let come to simmer.

***Turn fire down to medium low heat***
Step 9-Add 16 ounces Velvetta cheese and 1 cup shredded mild cheddar cheese. Let simmer for 6 minutes while stirring every 2 minutes.

Step 10- Add 1/4 teaspoon salt and 1/2 teaspoon of Chef Paul’s seafood magic or Tony Chachere’s creole seasoning. Add Shrimp into cheese sauce. Stir all ingredients together. Let simmer for 1 minute. Turn fire off and set pot aside.

***Preheat oven to 350 degrees***
Step 11- Lightly spread butter around the bottom and sides of your baking pan.

Step 12- Add elbow Macaroni into large pot. Pour Cheese sauce on top. Stir all ingredients together.

Step 13- Add macaroni mixture into baking pan. Spread around pan as evenly as possible. Sprinkle 1 cup Shredded mild cheddar cheese on top of macaroni mixture.

Step 14- Place into a preheated 350-degree oven for 30 minutes. Remove from oven and let cool for 5 minutes before serving.
