Butter beans and rice

What you’ll need

1 lb. of Lima (butter beans)
Unsalted butter
1 lb. D&D smoked sausage
2 lbs. Pickle meat or any type of smoked meat
Jasmine rice

Seasonings
1 yellow onion
3 ribs celery
1 green bell pepper
4 cloves of garlic
Fresh parsley
Bay leaves
Tony Chachere’s creole seasoning
Chef Paul’s poultry magic
Onion powder
Garlic powder

Preparation of ingredients
Step 1- Chop 1 yellow onion, 3 ribs celery, 1 green bell pepper, 4 cloves garlic, a small amount of parsley and 1-pound smoked sausage.

Step 2- Add pickle meat into strainer and rinse with cold water. If you are using smoked meat do not follow this step.

Step 3- Place a small amount of beans in the palm of your hand. Remove and bad or broken beans. Once done add the beans into the pot.

Step 4- Add 9 cups cold water into the pot of beans. Let sit overnight.

Preheat fire to medium high heat
Boiling the pickle meat
Step 5- Add 1 1/2 quarts water into a large pot. Let come to a simmer. Add pickle meat and let simmer for 1 hour. Once done, reserve 1 cup of pork stock. If you are using smoked meat do not follow this step.

Step 6- Add pickle meat into strainer and set aside.

Preheat fire to medium high heat
Cooking the Lima butter beans

Step 7- Add 1 cup of pork stock pickle meat or smoked meat into the pot of beans. Let come to a simmer.

Step 8- Add 1 1/2 Cups Chopped yellow onion, 1 1/2 cups chopped celery, 1 1/2 cups chopped green bell pepper, 2 tablespoons chopped garlic, 1/8 cup chopped parsley, 4 bay leaves, 2 teaspoons Tony Chachere’s creole seasoning, 2 teaspoons Chef Paul Prudhomme’s poultry magic, 2 teaspoons onion powder and 2 teaspoons garlic powder. Stir all ingredients together. Let simmer for 1 hour.

Step 9- Add chopped smoked sausage and 3 tablespoons unsalted butter. Stir all ingredients together. Let simmer for 15 minutes. Let cool for 10 minutes before serving.

Cooking the rice
Preheat fire to medium high heat

Step 10- Add 1 1/2 quarts water into a medium sized pot. Let come to a simmer.

Step 11- Add 1 cup rice and stir. Let simmer for 8 minutes.

Step 12- Add rice into mesh strainer. Rinse with cold water. Cover with lid and let sit for 10 minutes before serving.
