What you’ll need
1-pound green baby lima beans
1-pound smoked pork jowl bacon
1-pound ham seasoning
Salted butter
Seasonings
Salt
Black pepper
Tony Chachere’s creole seasoning
Chef Paul’s poultry magic
Dried parsley
1 yellow onion
Garlic
Preparation of ingredients
Seasonings
Step 1- Chop 1 yellow onion and 2 cloves garlic until minced. Place into 2 separate bowl and set aside.
Meat
Step 2- Slice pork jowl bacon into thick slices. Cut each slice in half. Once done cut ham seasoning into medium sized cubes. Place bacon slices and ham seasoning into 2 separate bowls and place into fridge until ready to be cooked.
Beans
Step 3- Add a small amount of lima beans into the palm of your hand. Remove and discard any broken of discolored beans. Add the rest of the beans into a large pot. Add 10 cups of water into pot. Cover with lid and let soak for 2 hours.
Sautéing the bacon and seasonings
Preheat fire to medium heat.
Step 4- Add bacon slices into a large saucepan. Let sauté for 10 minutes stirring occasionally. Remove bacon strips and place into a serving bowl. Once done add 1 1/2 cups chopped yellow onion into saucepan. Let sauté for 6 to 8 minutes stirring occasionally. Once done turn fire off and add sauteed chopped onion into the same bowl with the bacon strips using a slotted spoon and set serving bowl aside.
Cooking the beans
Preheat fire to medium heat.
Step 5- Let the water added into the large pot with the Lima beans in it come to a simmer. Once the water is at a simmer, add 1 tablespoon chopped garlic, sauteed onions and bacon strips, 1 teaspoon salt, 1 teaspoon Tony Chachere’s creole seasoning, 1/4 teaspoon black pepper, 1/2 teaspoon Chef Paul’s poultry magic and 1 teaspoon dried parsley. Stir all ingredients together and let simmer for 1 hour and 20 minutes (Cooking times vary) stirring occasionally.
Step 6- Add ham seasoning, and 3 tablespoons salted butter. Stir all ingredients together and let simmer for 8 to 10 minutes stirring occasionally. Turn fire off and let cool for 30 minutes or an hour before serving.
Notes- Mixture will thicken as it cools. You can add some water to it to thin it out if it is too thick. You can serve the very next day as the flavors will settle and increase overnight. You can also add turkey bacon and smoked turkey in place of the pork. Reminder results in flavor can be affected by using Turkey.
