What you’ll need
Whole milk
Heavy Cream
3 large eggs
Sugar
Salt
1-pound frozen Strawberries (Thawed)
1 large lemon
Vanilla extract
Strawberry extract
Tools you’ll need
1 1/2-quart ice cream maker
Airtight container or bowl
Food processor
Plastic wrap
Making the Strawberry Sauce
Step 1- Add strawberries into a food processor. Blend for 2 to 3 minutes.
Preheat fire to medium high heat.
Step 2- In a medium sized pot, add strawberry puree and 3/4 cup sugar. Cut 1 large lemon in half and squeeze 1/2 of a lemon into a mesh strainer with the medium sized pot underneath it. Stir all ingredients together. Let simmer for 5 minutes. Turn fire off and let strawberry sauce cool completely. Once done, add strawberry sauce into a small bowl. Place into fridge for 4 to 6 hours or overnight.
Making the custard mixture
Step 3- Separate 3 egg yolks from 3 egg whites. Place egg yolks into a medium sized bowl. Add 2/3 cup sugar and 1/4 teaspoon salt. Stir with whisk vigorously until mixture is a pale yellow color.
Preheat fire to medium high heat.
Step 4- Add 2 cups heavy whipping cream and 1 cup whole milk. Stir until combined. Let come to a simmer. Once mixture begins to simmer, turn fire off. Add milk/cream mixture into egg yolk mixture in 3 separate intervals while mixing continuously with the whisk. Continue to stir until combined.
Preheat fire to medium low heat.
Step 5- Add custard mixture into a medium sized pot. Stir continuously with spoon for 6 minutes. Once done turn fire off.
Note- If egg particles appear the mesh strainer or if your custard has an egg smell then you have overcooked your custard. You will have to start over with making a new custard.
Step 6- Pour custard mixture into a mesh strainer with a medium sized bowl underneath it. Add 1/3 to 1/2 cup strawberry sauce, 2 teaspoons vanilla extract, and 2 teaspoons strawberry extract. Stir with spoon until combined. Carefully place plastic wrap on top of hot custard. This will prevent that skin from forming on top of the custard. Place custard into fridge for 6 hours or overnight recommended.
Making your ice cream
Notes- Make sure you freeze your ice cream maker base for 24 hours or according to your ice cream maker’s instructional manual. You can also add as much of the strawberry sauce into your ice cream. The more you add, the better the flavor.
Step 7- Turn your ice cream maker on. Add Strawberry custard mixture and the rest of your strawberry sauce into your ice cream maker base. Let churn for 25 to 30 minutes.
Step 8- Add ice cream into an airtight container or bowl. Place into freeze for 4 to 6 hours (Soft Serve), 24 hours or overnight (Hard serve).
