What you’ll need
Coconut Milk
Sweetened Flaked Coconut
All purpose flour

Butter flavored Vegetable shortening
Large eggs (Room temp)

9 inch round standard pie pan
Pastry cutter or Food processor

Preparation of pie crust
Step 1- Add 2 cups All purpose flour, 1/4 cup Sugar, 1/4 teaspoon salt, 6 tablespoons unsalted butter (Cold) and 6 tablespoons butter flavored vegetable shortening (Cold) into a food processor or large bowl. Pulse mixture with food processor or cut butter and shortening into flour mixture using a pastry cutter until the butter and shortening is cut into the flour.
Step 2- Transfer mixture into a large bowl and add 1/3 cup cold water. Stir with spoon until dough starts to come together. From there form the mixture into a dough with your hands.
Step 3- Lightly flour surface of table and add dough onto table. Press down into a flat circle with your hands. Lightly flour dough and roll the dough out into a large thin circle. Once done, add flour on top of dough and roll dough onto the rolling pin. Sprinkle extra flour onto the dough as you are rolling it up. This will prevent the dough from sticking.
Step 4- Carefully unroll dough onto pie pan using your hands. Fit dough into pie pan by carefully pressing dough down into the pan with your hands while lifting the edge of the pie crust. Trim off any excessive dough from the edge of the pie crust, leaving 1 1/2 inches of pie dough left on the edge of the pie pan.
Step 5- Take index finger and middle finger and place them on the outside edge of the crust and take your index finger from the opposite side of your hand and place it on the inside edge of the pie crust. Push inward with you index and middle finger while pushing outward with the opposite index finger. Demonstration picture is below.
Step 6- Place prepared pie shell into freezer for 1 1/2 or 2 hours or until pie crust is frozen. Do not start on the filling of the pie until the pie crust is frozen. You can prepare the pie crust a few days in advanced.
Making the filling
Step 7- Add 1 2/3 cups coconut milk, 5 large eggs (Room temp), 1 1/2 cups sugar, 3 tablespoons melted unsalted butter, 1/4 teaspoon salt, 2 teaspoons vanilla extract and 1 teaspoon coconut extract. Stir all ingredients with whisk until combined.
Baking the pie
Preheat oven to 350 degrees
Step 8- Pour filling into frozen pie shell and sprinkle sweetened flaked coconut on top of the pie. (1 1/2 cups estimated)
Step 9- Place into a preheated 350 degree oven for 1 hour or 1 hour and 10 minutes. Once pie is done, remove it from oven. If you tap the sides of the pie pan or the top portion of the pie and the top portion jiggles slightly in the center or springs back when you tap it on top, the pie is done. Let pie cool completely before serving.
For best results- Serve pie the next day after baking. This will allow the pie to settle and for flavors to increase.
