Spiral Ham with Honey Mustard glaze

What you’ll need
9 pound Spiral Ham
Sugar
Brown Sugar
Honey
Salted or Unsalted butter
Zatarain’s creole mustard
Vanilla extract
Pineapple Slices
Marschino cherries
Cinnamon
All Spice

10x 15 inch roasting pan with rack
Flavor injector
Meat Thermometer
Pastry brush

Preparation of ingredients
Step 1- Remove Ham from package and place into roasting pan. Add pineapple slices and Cherries into two separate mesh strainer with a bowl underneath each one. Reserve the pineapple and cherry juice.


Step 2- Add Pineapple slices and cherries on to ham. Cut toothpicks in half and insert them into each pineapple slice and cherry. This will hold the items in place on the ham.

Making the Glaze
Preheat fire to medium high heat.

Step 3- Add 3/4 cup pineapple juice, 1/2 cup cherry juice, 1/2 cup water, 5 tablespoons melted salted or unsalted butter. (Add 1/8 teaspoon salt if you are adding the unsalted butter), 1/2 cup sugar, 1/2 cup brown sugar, 2 tablespoons honey, 1 tablespoon Zatarains creole mustard, 2 teaspoons vanilla extract, 1 teaspoon cinnamon, and 1/4 teaspoon all spice into a medium sized pot. Stir all ingredients with a whisk until combined. Let simmer for 10 to 12 minutes. Turn fire off and let cool for 30 minutes to 1 hour.


Step 4- Add Glaze into flavor injector and inject the glaze into the inside of ham. Repeat this step 5 times altogether. Once done brush glaze all around the ham using a pastry brush.

Baking the Ham
Preheat oven to 325 degrees
Step 5- Add 1 1/4 cups water into roasting pan. Place into a preheated 325 degree oven for 30 minutes. Remove ham from oven. Brush glaze on to ham and place ham back into a preheated 325 degree oven for 30 minutes. Remove ham from oven. Internal temperature of ham should reach 120 degrees F. You only need to warm the ham since spiral hams are already fully cooked.. Let cool for 5 minutes before serving. You can also serve the ham slices and pour the pan juices from the roasting pan over the top of the ham.
