Glazed Lemon Cookies

Makes 20 cookies

What you’ll need
All Purpose Flour
Sugar
Baking soda
Salt
Unsalted butter (Room Temp)
Eggs (Room Temp)
1 Large Lemon
Lemon Extract
Vanilla Extract
Whole Milk
Confectioners sugar
Yellow Gel paste food coloring.

Tools you’ll need
Parchment paper
11×17 inch baking pan
Citrus juicer
Mesh Strainer

Preparation of ingredients
Step 1- Add 1 3/4 Cup all-purpose flour, 1 teaspoon baking soda and 1/4 teaspoon salt. Stir all ingredients together and set aside.

Step 2- Add 1 Stick unsalted butter (Room Temp) and 2/3 cup sugar. Mix on high speed for 4 minutes. Don’t forget to scrape down the sides of your mixing bowl.

Step 3- Add 1 Large Egg (Room Temp) Mix until well combined.

Step 4- Rinse Lemon, Zest lemon, cut lemon in half and juice lemon using a citrus juicer. Once done strain lemon juice into mesh strainer. Should have 1/4 cup lemon juice.

Step 5- Add 1/4 cup lemon juice, 1/8 cup lemon zest, 2 teaspoons lemon extract and 1 teaspoon of vanilla extract. Mix all ingredients on medium high speed for 2 minutes.

Step 6- Add your All Purpose flour mixture. Mix all ingredients together on a medium low speed for 2 to 3 minutes. Place into fridge for 1 hour.

Step 7- Lightly butter the bottom of your baking pan. Add a sheet of parchment paper on to baking pan.

***Preheat oven to 325 degrees***

Step 8- Using an ice cream scoop take a small amount of the Lemon cookie dough and place it into the palm of your hand. Roll it into a ball. Place into baking pan.

Step 9- Slightly press down on each individual piece of cookie dough using the palm of your hand.

Step 10- Place into a preheated 325-degree oven for 25 minutes. After 25 minutes remove cookies from the oven. Let cookies cool completely.

Making the icing
Step 11- Add 2/3 Cup confectioners’ sugar, 1 1/2 tablespoon melted unsalted butter, 1 1/2 tablespoon warm whole milk, 1/4 teaspoon lemon extract and Optional 1/4 teaspoon vanilla extract. Stir all ingredients until mixture is creamy.

Step 12- Add a small amount of gel paste yellow food coloring onto a toothpick. Add toothpick into icing and swirl it around. Stir all ingredients together.

Adding the icing onto the cookies
Step 13- Using a spoon add a small amount of icing onto each cookie and spread the icing around each cookie using the back of a spoon. Let the icing set for 6 minutes.

Storing your Cookies
Store your cookies by placing them into a zip lock bag or airtight container. Lasts up to a week.
