Preparation of ingredients
Onions
Step 1- Slice off the bottom and top portions of a large yellow onion. Make an incision on the outer skin of the onion and peel off the outer skin of the onion with your fingers.
Step 2- Turn the yellow onion onto it’s side and slice the onion into 1/4 or 1/2 inch thick slices. From there separate each onion slice into onion rings.
Crumbled Funyuns
Step 3- Add 1.5 ounces in weight of Funyuns into a small food processor. Blend for 30 seconds. If you don’t have a food processor, add the crumbled Funyuns into a plastic bag and crumble them by hand.
Onion ring batter
Step 4- Add 1/2 cup all-purpose flour, 1/2 cup yellow cornmeal, crumbled Funyuns, 1/2 teaspoon salt, 1/8 teaspoon black pepper, 1/2 teaspoon Tony Chachere’s creole seasoning, 1/2 teaspoon granulated garlic and 1 and 1/2 teaspoons granulated onion into a medium-sized bowl. Stir all ingredients together.
Step 5- Add 3/4 cup buttermilk (cold), 1/4 cup whole milk (cold), and 1 large egg (beaten). Stir all ingredients together until combined. Batter will be thick. That is normal.
Heating the oil
Preheat fire to medium heat. If you are using a deep fryer, preheat it to 350 degrees F.
Step 6- Add 48 fluid ounces of vegetable or canola oil into a medium-sized 4-quart pot. If you are using a deep fryer, add the amount of oil according to the instructions on your deep fryer. Let get hot until the temperature of the oil reaches 350 degrees F.
Coating and frying the onion rings
Step 7- Dip each onion piece into the batter. Flip the onion piece and continuously coat the onion ring with the batter until the batter sticks to the onion.
Step 8- Add the onion pieces into the hot oil. Fry 4 onion rings at a time. Fry for 4 to 5 minutes or until the onion rings are a nice light golden brown.
Step 9- Remove the onion rings out of the hot oil using tongs. Hold for a few seconds to allow some of the oil to drain back into the pot or deep fryer. Transfer the onion rings onto a cooling rack with a serving plate underneath it.
Step 10- Let the onion rings cool for 5 to 10 minutes before serving.
Quick tips- You can also reheat the onion rings in an air fryer on 380 degrees for 2 to 4 minutes or until the onion rings are hot and crispy. You can also use more onions and double the onion ring batter if you need to.
