Fried Pork Chops

Makes 7 fried pork chops

What you’ll need
3 pounds (7 assorted Pork chops)
All-Purpose flour
3 large eggs
Canola oil

Seasonings
Salt
Tony Chachere’s Creole seasoning
Chef Paul’s Poultry magic
Onion powder
Garlic powder
Cayenne pepper
Dried thyme

Tools you’ll need
10-inch Cast Iron skillet

Preparation of ingredients
Step 1- Add Pork Chops into strainer. Rinse with cold water.

Step 2- Transfer Pork chops on to a large chopping board. Pat each side of the pork chops dry with napkins

Step 3- Lightly sprinkle Salt, Tony Chachere’s Creole seasoning, Chef Paul’s Poultry magic, Onion powder, Garlic powder, Cayenne pepper and dried thyme on to both sides of Pork chops. Place pork chops into a medium sized bowl and cover with lid. Place into fridge for 1 hour or overnight.

Step 4- Add 3 large eggs, 1/8 teaspoon salt, 1/8 teaspoon Tony Chachere’s Creole seasoning, 1/4 teaspoon Chef Paul’s Poultry magic, 1/4 teaspoon onion powder and 1/4 teaspoon garlic powder into a medium sized bowl. Stir with whisk until combined. Set aside.

Step 5- Add 3 cups All-purpose flour, 2 teaspoons salt, 1 tablespoon Tony Chachere’s creole seasoning, 2 teaspoons Chef Paul’s Poultry magic, 1 tablespoon onion powder, 1 tablespoon garlic powder, 2 teaspoons cayenne pepper and 2 teaspoons dried thyme into a large bowl. Stir and set aside.

Frying the Pork chops
Important notes- Frying times vary depending on the size and thickness of the pork chops. Pork chops will float at the surface of the oil when done.

Step 6- Add 4 1/2 cups Canola oil into a cast iron skillet. Let get hot for 8 to 10 minutes.

Step 7- Add each individual pork chop one at a time into the seasoned egg mixture (Light coating), and the seasoned all-purpose flour batter. Once you’ve added the pork chop into the all-purpose flour batter, shake bowl to coat the pork chop. When you remove the pork chop shake the pork chop slightly.

Step 8- Add Each individual pork chop into the hot oil. Let fry for 3 to 5 minutes on each side. Once done remove pork chop and place on to cooling rack or serving dish lined with napkins. Let cool for 5 to 10 minutes before serving.
