What you’ll need
6 large granny smith apples (3 pounds 10 ounces)
1 small or medium-sized lemon
All-purpose flour
Sugar
Brown sugar
Salt
Unsalted butter (Cold)
Butter flavored vegetable shortening (Cold)
Cornstarch
Vanilla extract
Cinnamon
All spice
Quaker oats (Oatmeal)
Chopped pecans
Tools you’ll need.
9.5-inch-deep dish pie pan
Food processor or pastry cutter
Rolling pin
Apple Wedger
Fruit peeler
Preparation of ingredients
Bottom crust
Step 1- Add 1 1/3 cups all-purpose flour, 2 1/2 tablespoons sugar, and 1/8 teaspoon salt into a food processor and pulse 3 times. Add 4 tablespoons unsalted butter (Cold) and 4 tablespoons butter flavored vegetable shortening (Cold). Pulse 8 to 10 times. From there, add the combined ingredients into a large bowl.
Step 2- Add 1/4 cup cold water and stir with a sturdy spoon until the mixture starts to come together. Form the mixture into a dough using your hands. Once the dough is formed, knead it for 30 seconds. Place into fridge for 10 or 15 minutes to allow the dough to rest.
Step 3- Light flour the surface of your table. Place the dough on top of the table. Press the dough down with your hands to form a flat circle. Sprinkle flour on top of the dough and roll the dough out into a 14-inch diameter circle.
Step 4- Place the rolling pin onto the edge of the flattened dough and carefully roll the dough onto the rolling pin. As you are rolling the dough onto the rolling pin, make sure you sprinkle flour on to the dough to prevent it from sticking.
Step 5- Place the rolling pin with the dough on it on to the outer edge of the pie pan and carefully unroll the dough on to the top of the pie pan. Press the dough on to the bottom and sides of the pie pan with your hands. Be sure to lift the outer edge of the dough to make sure the air escapes.
Step 6- Cut the excess dough using kitchen scissors. Once done, you should have 1 1/2 inches of dough extending from the edge of the pie pan. To form the pie crust edge, roll the edge of the dough toward the edge of the pie crust. To crimp the pie crust, take your index and your middle finger and push the edge of the pie crust outward while pushing the pie crust inward with your opposite index finger while going all around the edge of the pie crust. Take a fork and poke holes into the bottom portion of the pie dough. Place into fridge for 30 minutes or until the pie crust is frozen. Crump topping
Step 7- Add 1 cup all-purpose flour, 2 tablespoons sugar, 2 tablespoons brown sugar, and 1/8 teaspoon salt into a food processor and pulse 2 or 3 times. Add 3 tablespoons cubed unsalted butter (Cold) and 3 tablespoons cubed butter flavored vegetable shortening (Cold) and pulse 8 to 10 times. Add 1/4 cup quacker oats and 1/4 cup chopped pecans and pulse 4 to 6 times.
Step 8- Add 1 1/2 tablespoons cold water and 1 teaspoon vanilla extract and pulse 4 to 6 times. Transfer mixture into an airtight container or bowl and place into freezer for 30 minutes to 1 hour stirring occasionally.
Apples
Step 8- Peel 6 large granny smith apples with the fruit peeler. Place the center of the apple wedger onto the center of each apple and push down. This will separate the core and the apple pieces separately. Discard the apple core. Trim off 1/16th of an inch off of each apple piece. Cut each apple piece in half and place the apple slices into a large bowl.
Making the apple filling
Step 9- Cut a small to medium-sized lemon in half. Squeeze half of a lemon on to the apple slices and toss the apple slices with your hands. Add 3/4 cup sugar, 1/4 cup brown sugar, 3 tablespoons cornstarch, 1 teaspoon cinnamon, 1/4 teaspoon all spice, and 1/4 teaspoon salt. Stir all ingredients continuously for 5 minutes. As you stir the apples, they will release their juices. Place a strainer on top of a large pot (Same pot you will use to cook the apple filling in) and add the apple slices into strainer and stir for 30 seconds. This will allow the juices from the apples to drain into the large pot. From there place the strainer of apples on the side.
Preheat fire to medium heat.
Step 10- Add the large pot with the juices from the apples in it on top of the stove. Next add 2 tablespoons melted unsalted butter and stir. Let mixture simmer for 2 minutes stirring occasionally. Ture your fire off and add apple slices and 1 teaspoon vanilla and stir. Let cool for 10 minutes.
Assembling and baking your apple pie
Preheat oven to 350 degrees.
Step 11- Add apple filling into your frozen pie pan. Spread apples around the pie pan as evenly as possible. Carefully move the apple slices toward the center of the pie. This will allow the crumb topping to be added evenly on top of the filling. Carefully add the entire contents of the crumb topping on top of the apple filling.
Step 12- Place into a preheated 350-degree oven for 1 hour and 10 minutes. Once the baking time has ended, remove the pie from the oven. Let cool for 3 to 4 hours before serving. For best results, once the pie has cooled completely, place into fridge and serve the next day so the flavors can settle and increase overnight.
Serve with whipped cream or vanilla ice cream on top and enjoy!
