What you’ll need
3 Large Sweet Potatoes
3/4 Cup Evaporated Milk (Room Temp)
2 Large Eggs (Room Temp)
1 1/2 Cups Sugar
1/2 Stick of butter melted (Room Temp)
1 Tablespoon of 100% Pure Vanilla Extract
1 Heaping Teaspoon of Cinnamon
Less than 1/4 teaspoon of Nutmeg
Less than 1/4 teaspoon of All Spice
Preparation of Sweet potato pie batter.
Step 1 In a large pot filled with cold water, add 3 Large Sweet Potatoes. Let simmer for 1 hour and 20 minutes
Step 2 Once your sweet potatoes are finished the simmering, place in a large bowl and let cool for 1 hour.
Step 3 Once Sweet Potatoes are cooled, Peel the skin off. Should be very EASY to peel.
Step 4 Once Peeled, Smash sweet potatoes until creamy.
Step 5 Before we begin the filling first mix with large spoon or hand mixer for 30 seconds
Step 6 Add two eggs (Room Temp) one at a time and mix for 40 seconds each
Step 7 Add 1/2 stick of Melted Butter and mix for 1 minute
Step 8 Add 3/4 Cup of Evaporated Milk (Room Temp) and mix for 1 minute or until well combined
Step 9 Add 1 1/2 Cups of White Sugar and mix until combined
Step 10 Add 1 tablespoon of Vanilla extract, 1 teaspoon of Cinnamon, 1/8 teaspoon of nutmeg and 1/8 teaspoon of All Spice.
Step 11 Blend mixture for 3 minutes. Make sure you scrape down the sides of your bowl as you are mixing this.
Baking your Sweet Potato pie
Preheat oven to 360 degrees.
Step 12- Add prepared sweet potato pie batter into deep dish pie pan fitted with a frozen pie shell.
Step 13 Place into a preheated 360-degree oven. Bake for 1 hour and 10 minutes.
Step 14 Remove pie from oven. Tap sides of pie pan. If the center of the pie jiggles slightly or not at all, the pie is done. Let pie cool completely before serving.
Storage. Place in fridge. Will last 5 to 7 days. You can also freeze this pie up to a month in advanced.
