Old Fashioned Sweet Potato Pie

What you’ll need

3 Large Sweet Potatoes

2 Large eggs (Room temp)

Whole Milk (Room temp)

Unsalted Butter 

Regular Sugar

100% Pure Vanilla Extract

One Whole Vanilla bean

Ground Cinnamon

Ground Nutmeg

Ground All Spice

Tools you’ll need

Hand or stand mixer

9 inch Deep Dish pie pan fitted with a frozen pie shell.

13 x 9 inch pan

Aluminum foil

Note- Make sure you have prepared your pie crust. It must be frozen inside a pie pan before starting this recipe.

Baking the sweet potatoes. 

Preheat oven to 400 degrees.

Step 1- Line the bottom of the 13×9 pan with Aluminum foil

Step 2- Rinse all 3 Sweet Potatoes with water. Pat each sweet potato dry with a napkin. Place sweet potatoes in to 13 by 9-inch baking pan.

Step 3- Place into a preheated 400-degree oven. Bake for 1 hour and 20 minutes. Set aside and let cool completely.

Making the milk mixture.

Preheat fire to medium high heat.

Step 4- Take whole vanilla bean and split it in half going down the full length.

Step 5- Add 1 cup of milk, 1 tablespoon of vanilla extract and the entire Vanilla Bean (Split) into a medium sized pot. Stir continuously until milk gets hot.

Step 6- Add milk mixture into a mesh strainer with a medium sized bowl underneath it. Discard the vanilla bean. Set bowl with milk mixture on the side and let cool until it’s warm.

Preparing the Sweet potato pie filling. 

Scrape down sides of bowl after mixing all ingredients.

Step 7- Peel sweet potatoes with a butter knife. Transfer sweet potatoes into a large bowl.

Step 8- Smash Sweet Potatoes with a potato masher.

Step 9- Add 2 large eggs (Room temp) and mix on a medium high speed until combined.

Step 10-Add 4 tablespoons melted unsalted butter. Mix on a medium high speed until combined.

Step 11- Add the milk/vanilla mixture and mix on a medium high speed until combined.

Step 12- Add 1 2/3 Cups Sugar and mix on a medium high speed until combined.

Step 13- Add 1 Teaspoon of Cinnamon. 1/8 teaspoon of Nutmeg and 1/8 Teaspoon of all spice. Mix on a medium speed until combined.

Step 14- Add prepared Sweet Potato pie batter into deep dish pie pan fitted with a frozen pie shell. To make batter even, shake pan slightly.

Step 15- Place into a preheated 350-degree oven. Bake for 1 hour and 10 minutes. Remove pie from oven. Tap sides of pie pan. If the filling slightly jiggles in the center or it doesn’t jiggle at all, the pie is done. Let pie cool completely before serving.

For best results- Serve pie the next day. Flavors will settle and increase overnight.

Storage- Place pie in fridge. Will last 5 to 7 days.
