What you’ll need
8oz Pecan halves
Unsalted butter
Evaporated milk
Sugar
Heavy cream
Whole milk
Vanilla extract
Tools you’ll need
1 1/2-quart Ice cream maker
Air tight container
Parchment paper
Preparation of ingredients
Step 1- Chop 3/4 Cup Pecan halves into bite sized pieces.
Making the pralines
***Preheat fire to medium high heat***
Step 2- Add 1 Cup evaporated milk, 1 cup sugar and 3 tablespoons butter into a medium sized pot. Stir all ingredients and let come to a simmer first. Let simmer for 10 minutes. After 10 minutes your praline mixture should be cooked down. Pay attention to the boiling pattern in the picture below. This is the exact pattern you should have in your pot. It tells you that the pralines are almost ready.
Step 3-Add Chopped pecans and 2 teaspoons vanilla. Stir continuously for 3 minutes. After 3 minutes turn your fire off and continue to stir for 3 additional minutes.
Step 4- Add Praline mixture on to a sheet of parchment paper. Spread praline around as evenly as possible. Let praline set for 20 minutes. This will allow the praline to cool and harden.
Step 5- Chop praline into small bite sized pieces.
Making your ice cream
Note- Make sure you freeze the base of your ice cream maker for 24 hours before making your ice cream.
***Preheat fire to medium high heat***
Step 6- Add 2 cups heavy cream, 1 Cup whole milk and 2/3 cup sugar into a medium sized pot. Stir all ingredients together. Let come to a simmer.
Step 7- Turn fire off and Add 2/3 Cup of chopped Pralines. Stir all ingredients together. Let sit for 3 minutes. This will allow the praline candy to melt into the milk and cream mixture.
Step 8- Add Ice cream mixture into a medium sized bowl. Cover with lid and place into fridge for 4 hours or overnight.
Step 9- Add Ice cream mixture into the base of your ice cream maker. Let churn for 20 minutes.
Step 10- Add 2/3 Cup of chopped pralines into ice cream maker. Let churn for 5 minutes.
Step 11- Place Ice cream into an airtight container and place into freezer. Serve cold and enjoy!
Freezer times- Keep ice cream in freezer at all times.
Soft serve ice cream- 1 to 2 hours.
Firm ice cream- 6 hours or overnight.
