What you’ll need
Cake Flour or All-Purpose flour
Sugar
Brown sugar
Baking Powder
Unsalted Butter (Room Temp)
Large eggs (Room Temp)
Sour Cream (Room temp)
Vanilla Extract
Cinnamon
6oz of Pecan halves
Whole milk (Warm)
Confectioners’ Sugar
Tools you’ll need
Baker’s Joy Non-stick baking spray
Hand or stand mixer
Nodic Ware anniversary bundt pan
Cake sifter
Preparation of ingredients
Step 1- Sift 3 1/4 Cups Cake Flour or All-Purpose flour in a large bowl. Add 1 teaspoon of baking powder. Stir all ingredients together.
Step 2- Add 3 Sticks of Unsalted butter (Room temp) and 3 Cups Sugar. Mix on high speed for 5 minutes.
Step 3- Add 5 Eggs one at a time and mix on medium low speed until combined. Do not over mix.
Step 4-Add 2 teaspoons of Vanilla extract and mix until combined.
Alternate the flour mixture with the sour cream mixture
Step 5- Add 1 1/4 Cups flour mixture and 1/3 cup sour cream. Mix on medium low speed until combined.
Step 6-Add 1 Cup flour mixture and 1/3 cup sour cream. Mix medium low speed until combined.
Step 7-Add 1 Cup flour mixture and 1/3 cup sour cream. Mix medium low speed until combined. Do not over mix.
Making the Cinnamon Sugar Pecan filling
Step 8-Add 2/3 Cup pecan halves into food processor. Blend for 1 minute or until minced.
Step 9- In a small bowl Add 1/2 Cup Minced pecan halves, 3 tablespoons cinnamon and 1/4 cup sugar. Stir until mixture had no visible lumps.
Spray bundt pan with non stick baking spray
*** Preheat oven to 325 degrees***
Step 10- Add half of the cake batter into your Bundt pan. Spread batter around Bundt pan as evenly as possible.
Step 11- Generously sprinkle Cinnamon, Sugar, pecan filling on top of cake batter.
Step 12- Pour cake batter on top of cinnamon sugar pecan filling. Spread around as evenly as possible.
Step 13- Place into a preheated 325-degree oven. Bake for 1 hour and 20 minutes.
Step 14- Remove cake out of oven. Toothpick test inserted will come out clean. Let cake cool completely. Once cake has cooled flip cake over.
Making the icing
Step 15- Add 1 1/4 Cups confectioners’ sugar, 3 tablespoons of melted unsalted butter, 2 tablespoons of warm whole milk and 1/2 teaspoon vanilla extract. Stir all ingredients until mixture is smooth with no visible lumps.
Step 16- Pour icing on top of your cake. Once done let icing set for 15 minutes.
