What you’ll need
Evaporated milk
Brown Sugar
Unsalted Butter
Sweetened Flaked Coconut
Chopped Pecans
Vanilla Extract
Corn Starch
Salt (New addition to recipe)
Tools you’ll need
Mesh Strainer (Optional)
Preparation of frosting
Preheat fire to medium low heat.
Step 1- Add 1 stick of Unsalted butter into a medium sized pot and let it melt. Turn your fire off.
Step 2- Add 1 Cup of evaporated milk, 1 teaspoon of vanilla extract, 1/8 teaspoon salt and 1/2 teaspoon of Cornstarch into a small bowl. Stir all ingredients with a whisk until combined.
Preheat fire to medium low heat.
Step 3 Add 1 Cup of Brown Sugar into pot with melted butter. Let sit for 6 minutes stirring occasionally.
Turn fire up from medium low to medium high heat.
Step 4-Add Evaporated milk mixture and stir until combined. Let come to a simmer.
Step 7 Add 1 1/4 cups of flaked coconut and 1/2 cup of chopped Pecans. Let simmer for 5 to 6 minutes stirring occasionally.
Step 8- Turn fire off and let frosting cool completely.
Note- Frosting will thicken as it cools.
Troubleshoot– If your frosting has some oil build up add into a mesh strainer with a bowl or pan underneath it. This will remove the oil build up.
Storage- Place frosting into an airtight container or bowl. You can leave out at room temp or place it into fridge, and it will stay fresh up to 7 days.
