What you’ll need
2 1/2 pounds cut okra
Large eggs (Room temp)
Plain breadcrumbs
Yellow cornmeal
All-purpose flour
100% natural olive oil spray
Seasonings
Salt
Black pepper
Tony Chachere’s creole seasoning
Chef Paul’s vegetable magic
Granulated onion
Granulated garlic
Cayenne pepper (Optional)
Tools
Aluminum foil
11 by 17-inch baking pan
Flat roasting rack
Preparation of ingredients
Okra
Step 1- Add okra and 1/4 or 1/2 teaspoon salt into a medium-sized bowl. Gently toss the okra and set aside.
Seasoned egg batter
Step 2- Add 4 large eggs (Room temp), 1/8 teaspoon salt, 1/8 teaspoon black pepper, 1/8 teaspoon Tony Chachere’s creole seasoning, and 1/8 teaspoon chef Paul’s vegetable magic into a medium sized bowl. You can also add 1/3 cup buttermilk (Room temp) to it as well. Sitr all ingredients together with a whisk until combined.
Seasoned Yellow cornmeal bread crumb and all-purpose flour batter
Step 3- Add 1 and 1/4 cups yellow cornmeal, 1 cup all-purpose flour, 1/2 cup plain breadcrumbs, 1 and 1/2 teaspoons salt, 1/4 teaspoon black pepper, 1 and 1/2 teaspoons Tony Chachere’s creole seasoning, 1 and 1/2 teaspoons chef Paul’s vegetable magic, 2 teaspoons granulated onion, 2 teaspoons granulated garlic, and 1/2 teaspoon cayenne pepper into a large bowl with a lid. Stir all ingredients together.
Step 4- Line a sheet of aluminum foil into an 11 by 17-inch baking pan. Add the flat roasting rack into the baking pan. If you have an additional flat roasting rack, you can place them side by side on top of your baking pan for more room.
Preheat oven to 375-degrees.
Breading and coating the okra
Notes- If the Seasoned Yellow cornmeal bread crumb and all-purpose flour batter begins to clump up, you will have to make another batch of the batter.
Step 5- Take a small amount of okra and add it into the seasoned egg batter. Coat the cut okra with the seasoned egg batter using your hands. When you remove the cut okra from the batter, shake the okra as you want a light coating. Transfer the cut okra into the Seasoned Yellow cornmeal bread crumb and all-purpose flour batter. Cover the bowl with a lid. Shake the bowl to coat the cut okra with the Seasoned Yellow cornmeal bread crumb and all-purpose flour batter.
Step 6-Transfer the breaded okra (In small amounts) into a separate large bowl or Tupperware. Lightly spray the okra with the natural olive oil spray. Toss the okra with your hands to coat the okra with the olive oil spray. Lightly spray the olive oil spray again onto the breaded okra and move the okra around the bowl again with your hand.
Step 7- Remove the breaded okra from the bowl and place it onto the roasting rack with an 11 by 17-inch baking pan. If the okra falls through the rack, remove the flat roasting rack from the top of your baking pan with the okra on it and set aside. Take the breaded okra pieces that fell through the rack and place them into a medium-sized bowl. From there place the flat roasting rack with the okra on it back on top of your baking pan. Add the leftover breaded okra back on top of the roasting rack.
Step 8- Lightly spray the okra that’s on the roasting rack with the natural olive oil spray. Once done place into a preheated 375-degree oven on the bottom rack. Bake for 1 hour and 6 minutes.
Step 9- Remove breaded okra from the oven. Serve right away. If the okra gets cold you can place the breaded okra in small amounts into an air fryer on 375 degrees for 3 to 5 minutes.
