What you’ll need

Fat daddio tube pan or Nordic Ware anniversary bundt pan (15 cup capacity)
Baker’s joy non-stick baking spray
Cooling rack
Flat serving dish
Offset spatula
Preparation of ingredients
Cake flour or all-purpose flour mixture
Step 1- Sift 3 cups cake flour or all-purpose flour, 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt into a medium sized bowl. Stir all ingredients together.
Cream soda mixture
Note- Ingredients will vary depending on which flour you use. This is to ensure the cake has the proper rations to maintain texture and moistness.
Step 2- If you are using cake flour, add 1 and 1/2 cups cream soda soft drink (Room temp), 2 tablespoons heavy whipping cream (Room temp), and 2 tablespoons sour cream (Room temp). If you are using all-purpose flour, add 1 cup cream soda soft drink (Room temp), 2 tablespoons heavy whipping cream (Room temp), and 2 tablespoons sour cream (Room temp). Next add 3 teaspoons vanilla extract and 1/2 teaspoon of Dad’s cream soda soft drink mix. If you are using cream soda extract, add 2 to 3 teaspoons. Stir all ingredients with a whisk until combined.
Cake batter
Step 3- Add 3 sticks unsalted butter (Softened and at room temp), and 2 and 3/4 cups sugar into stand mixer bowl fitted with the paddle attachment. You can also use a hand mixer as well. Mix ingredients on high speed for 6 minutes. Scrape down sides of bowl.
Step 4- Add 5 large eggs into the batter one at a time while mixing on a medium speed. Scrape down sides of bowl.
Step 5-Alternate the cake flour or all-purpose flour mixture and the cream soda mixture into the batter 3 separate times. Mix on a medium low speed each time for 15 to 20 seconds or until combined. Make sure you scrap down the sides of your mixing bowl each time as well.
Baking the cake
Spray your bundt or tube pan with the Baker’s joy non-stick baking spray.
Preheat oven to 325 degrees.
Step 6-Add your prepared cake batter into your tube or bundt pan. Spread the batter around the pan as evenly as possible with a spatula. To make the batter more even, shake your tube or bundt pan and tap the bottom or the tube or bundt pan with your hand.
Step 7- Place into a preheated 325-degree oven on the middle rack. Bake for 1 hour and 10 minutes.
Step 8- Remove the cake from the oven. Toothpick inserted into the cake should come out clean. Let cool for 3 to 5 hours before removing the cake out of the pan.
Flipping the cake for icing
Step 9- Flip the cake over onto a flat serving dish. Place a cooling rack on top of the cake and flip the cake back over onto the opposite side. Place the cooling rack with the cake on top of it into an 11 by 17-inch baking pan.
Making the cream soda icing
Step 10- Add 1 and 1/4 cups confectioners’ sugar, 3 tablespoons melted unsalted butter, 3 tablespoons cream soda (Room temp), 1 tablespoon heavy whipping cream (Room temp), 1/2 teaspoon vanilla extract, 1/2 teaspoon butter extract, and 1/4 teaspoon cream soda drink mix and a light sprinkle of salt. If you have the cream soda extract, add 1/2 teaspoon of that as well. Stir all ingredients with a whisk until the icing is creamy and smooth with no visible lumps.
Step 11- Pour the icing on top of the cake. Take an offset spatula and glide the icing on top of the cake. As the icing free falls to the sides of the cake, spread the icing around the sides of the cake, using an offset spatula. Let the icing set for 15 to 20 minutes.
Step 12- Take two sturdy spatulas and place them underneath the cake. Carefully lift the cake up and place into onto a serving dish. After that the cake is ready to be served.
