Makes 5 cornbread cakes (You can double the recipe to serve more people)

What you’ll need
Yellow cornmeal
All-purpose flour
Sugar
Salt
Baking powder
Baking soda
Salted butter
Buttermilk (Room temp)
Large eggs (Room temp)
Vanilla extract
Cake batter extract (Optional)
Light corn syrup
Honey
Molasses
Tools
10-inch round cast iron skillet
Sturdy spoon and whisk
Two medium sized bowls
Making the honey butter syrup
Preheat fire to medium heat.
Step 1- Add 1/3 cup water, 2 tablespoons light corn syrup, 1 tablespoon molasses, 2 tablespoons honey, 3 tablespoons sugar and 1/8 teaspoon salt into a medium sized pot. Let simmer for 4 minutes.
Step 2- Turn fire off and add 1/4 teaspoon vanilla and 1 or 2 tablespoons salted butter. Stir until combined. Syrup will thicken as it cools.
Preparation of Cornmeal batter
Dry ingredients
Step 3- Add 3/4 cup yellow cornmeal, 1/2 cup all purpose flour, 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt into a medium sized bowl. Stir all ingredients together until combined and set aside.
Wet ingredients
Step 4- Add 1 cup buttermilk (Room temp), 1 large egg (Room temp), 4 tablespoons melted salted butter, 2 teaspoons honey, 2 teaspoons vanilla extract and 1/8 teaspoon cake batter extract (Optional) into a separate medium sized bowl. Stir with whisk until combined and set aside.
Step 5- Pour wet ingredients into dry ingredients. Stir with a sturdy spoon until batter is incorporated. It should also be slightly lumpy and thick.
Making the hoecakes
Preheat fire to medium low heat.
Step 6- Lightly spread salted butter into cast iron skillet. Let get hot for 1 to 2 minutes.
Step 7- Add 4.5 ounces by weight (1/4 cup plus 1 tablespoon) Cornmeal batter into cast iron skillet. Let sit for 4 minutes on one side. Flip the cake onto opposite side and let sit for 2 to 3 additional minutes.
Step 8- Once the cake is done place into onto serving dish and let cool for 3 to 5 minutes before serving. This recipe makes 5 cornbread cakes. Add salted butter and pour syrup onto cakes before serving and enjoy!
