What you’ll need
8 pounds Turkey necks
Zatarain’s Crab boil
Cayenne pepper (Optional)
1 large yellow onion
Celery
2 Green bell peppers
2 pods garlic
2 to 3 large lemons
Tools you’ll need
15 quart pot
Large strainer
Large spoon
Preparation of ingredients
Step 1- Rinse off Celery, Bell peppers and lemons. Chop 1 yellow onion, 7 stalks celery, 2 Green bell peppers into large to medium sized chunks. Cut 2 to 3 large lemons in half and cut the top off of each pod of garlic.
Step 2- Add Turkey necks into a strainer and rinse with cold water. Cover and let turkey necks sit out until they are at room temperature.
Preheat fire to high heat
Step 3-Add 2 gallons water, chopped onion, chopped celery, chopped green bell peppers, 2 pods garlic, lemon halves, 1 1/4 or 1 1/2 Cups Zatarain’s crab boil, and 1 to 2 tablespoons Cayenne pepper into a large 15 quart pot. Stir all ingredients together and let come to a simmer. Avoid tasting the water as it can be salty and spicy.
Step 4- Add Turkey necks and cover pot with lid. Let simmer for 2 hours and 30 minutes or until turkey necks are tender. Stirring occasionally.
Step 5- Turn fire off and Stir mixture. Over pot with lid and let mixture soak for 1 hour.
Step 6- Drain mixture into a large strainer with a large pot underneath it. You can remove and discard all of the onion, celery, bell pepper, garlic and lemon pieces. Once done let mixture cool for 5 to 10 minutes before serving.
