Makes 4 to 6 Pork Chops

What you’ll need
2 pounds Pork loin center cut Pork chops
Salted or unsalted butter or Olive oil
Seasonings
Salt
Black pepper
Tony Chachere’s creole seasoning
Chef Paul’s Pork and Veal Magic
Dried Thyme
Tools you’ll need
10-inch round cast iron skillet
Kitchen exhaust fan (To help ventilate the smoke)
Box fan (Placed in window to help remove the smoke.)
Preparation of ingredients
Step 1- Add Pork chops into a strainer and rinse with cold water. Pat each pork chop dry really well with napkins and place them into an 11 by 17 inch baking pan.
Step 2- From there, add 2 tablespoons melted unsalted butter and 2 tablespoons olive oil into a small bowl or measuring cup and stir. If you are using all of the same ingredient (Olive oil or melted butter) add 4 tablespoons. Once done, add 2 teaspoons of the butter and olive oil mixture onto the top of each pork chop. Rub the butter and olive oil mixture around each pork chop using your hands.
Step 3-Sprinkle 1/4 teaspoon each of the salt, black pepper, Tony Chachere’s creole seasoning, and 1/2 teaspoon Chef Paul’s pork and veal magic, and 1/4 teaspoon dried thyme onto both sides of pork chops. As a special bonus, you can also sprinkle 1/2 teaspoon of onion and garlic powder onto both sides of the pork chops as well.
Preheat fire to high heat. (Highest setting on your stove)
Notes (Important)– It will get smoky; you will have to turn on your kitchen exhaust fan and also place a fan into the window to get the smoke out. Cooking times vary depending on the size, thickness, stove setting and temperature of the skillet prior to cooking the pork chops.
Step 4- Let Cast iron skillet get hot for 2 to 4 minutes. Once the skillet starts smoking, add pork chops into skillet either one or two at a time. Let fry for 4 to 6 minutes on each side. If the pork chops start to curl up during the cooking process, press them down onto the skillet with a sturdy spatula.
Step 5- Remove pork chops from skillet and place onto a serving plate. Wait 5 to 10 minutes before serving. Leave your kitchen exhaust fan and box fan placed into your kitchen window on for at least 30 minutes to an hour. Let the cast iron skillet cool before cleaning.
