What you’ll need
2-pounds Salmon
Pineapple juice
Soy Sauce
Rice cooking wine
Honey
Ginger
Cornstarch
Sugar
Salted butter
1 or 2 lemons
Seasonings
Salt
Tony Chachere’s creole seasoning
Chef Paul’s seafood magic
Tools you’ll need
Cast iron skillet or frying pan.
Kitchen exhaust fan or fan placed into the window of your kitchen. (For ventilation)
Preparation of ingredients
Salmon
Step 1- Add Salmon into a strainer. Rinse Salmon off with cold water. If the skin of the salmon has scales on it, remove them with a sharp knife. From there cut the Salmon into 4 large pieces.
Step 2- Add Salmon into a medium-sized bowl along with 1/4 teaspoon salt, 1 teaspoon Tony Chachere’s creole seasoning, 1 teaspoon Chef Paul’s seafood magic, and squeeze half a lemon with a small mesh strainer placed underneath the lemon as you squeeze it onto the Salmon. Rub the lemon juice and seasonings onto the pieces of salmon. Cover bowl with lid and place into fridge for 2 to 4 hours or overnight.
Hawaiian Glaze
Note- You can make these 1 to 2 days in advance.
Step 3- Add 2/3 cup pineapple juice, 1/2 cup water, 1 tablespoon soy sauce, 2 teaspoons rice cooking wine, 2 tablespoons sugar,1/8 teaspoon ginger, and 2 teaspoons cornstarch into a medium-sized pot. Stir all ingredients with a whisk until combined. Let simmer for 4 minutes stirring occasionally. Once done turn fire off and let sauce cool until it’s warm.
Searing the Salmon
Note- Make sure you have your kitchen exhaust fan turned on or a fan in your kitchen window with the front of the fan facing outside. This is to ensure the smoke is removed from the kitchen. You can also use a frying pan in place of the cast iron skillet. Cooking times vary depending on the thickness of the Salmon, your stove setting and your skillet or frying pan.
Preheat fire to medium heat.
Step 4- Let the cast iron skillet or frying pan get hot for 1 or 2 minutes. Spread salted butter around the skillet or frying pan and let get hot for 30 seconds.
Step 5- Add the Salmon pieces into the skillet. Cooking times vary depending on the thickness of the Salmon, your stove setting and your skillet or frying pan. Let this sear for 8 minutes on each side. Place the Salmon onto a serving dish.
Step 6- Add the Salmon into a large bowl. Add some of the Hawaiian sauce onto the Salmon pieces. Make sure you reserve some of the sauce to add to the Salmon just before serving. Let the Salmon soak int the Hawaiian sauce for 5 minutes. After that the Salmon is ready to be served.
