Makes up to 70 meatballs.
Serves 10 to 12 people.
What you’ll need
2 pounds lean ground beef
2 six-ounce cans tomato paste (No salt added)
Vinegar
Worcestershire sauce
Liquid smoke
Molasses
Honey
Sugar
Plain breadcrumbs
2 large eggs
Seasonings
1 yellow onion
Salt
Tony Chachere’s creole seasoning
Onion powder
Garlic powder
Cayenne pepper

Preparation of Ingredients
Step 1- Chop 1 yellow onion.
Making the barbecue sauce
Step 2- Add 1 Cup tomato paste, 1/4 Cup vinegar, 1/3 Cup liquid smoke, 1/4 cup molasses, 1/4 cup honey, 1/3 cup sugar, 1 teaspoon salt and 1/2 teaspoon cayenne pepper into a large bowl. Stir all ingredients together until mixture is creamy and smooth. Once done place into microwave on high for 2 minutes. Stir barbecue sauce again and set aside.
Preparing and shaping the meatballs.
Step 3- In a separate large bowl add ground beef, 1 cup chopped yellow onion, 2 teaspoons salt, 1/2 teaspoon Tony Chachere’s creole seasoning, 1 teaspoon onion powder, 2 teaspoons garlic powder and 1/2 teaspoon cayenne pepper. Combine the seasonings into the ground beef using your hands.
Step 4- Add 2 large eggs, 1/8 cup Worcestershire sauce and 1/4 cup barbecue sauce into a medium sized bowl. Stir all ingredients together until well combined.
Step 5- Pour egg mixture onto ground beef mixture. Add 1/3 Cup plain breadcrumbs. Combine the egg mixture and breadcrumbs using your hands. Make sure all ingredients are well combined before proceeding to next step.
Preheat oven to 350 degrees
Step 6- Take a small amount of ground beef mixture and roll into a miniature sized meatball. Place meatballs into baking pan. Makes up to 70 meatballs.
Step 7- Place into a preheated 350-degree oven for 40 minutes. Once done remove meatballs from oven.
Step 8- Remove meatballs from oven and place each individual meatball onto a napkin and pat the meatball dry. This will remove most of the grease. Once done place meatballs into a strainer with a pan underneath it.
Preheat fire to medium high heat
Step 9- In a large pot add barbecue sauce, 2 tablespoons water and meatballs. Stir all ingredients together. Let simmer for 5 minutes. Turn fire off and let cool for 5 minutes before serving.
