What you’ll need
2 Ripe Bananas
Whole milk
Heavy Whipping Cream
4 Large eggs
Sugar
Salt
Vanilla extract
12 ounces vanilla wafers
Tools you’ll need
1 1/2 Quart ice cream maker
Airtight container or bowl
Preparation of ingredients
Step 1- Separate 4 eggs. Place egg whites into on bowl and place egg yolks into a separate bowl.
Step 2- Add 2/3 Cup sugar and 1/8 teaspoon salt in bowl with egg yolks. Stir all ingredients with whisk for 40 seconds or until mixture is pale in color.
Preheat fire to medium high heat.
Step 3- Add 2 Cups Heavy Whipping cream and 1 cup whole milk. Stir all ingredients together. Let come to a simmer. Once at a simmer turn fire off.
Step 4- Add Milk/Cream mixture into egg yolk mixture into 3 separate intervals while stirring with a whisk.
Preheat fire to medium low heat.
Note- If your custard has a strong eggy smell or when you remove you mesh strainer and there are egg particles in the strainer, you can and make the custard again. Also, the plastic wrap on top of the custard will prevent a crust from forming on top of your custard while it is in the fridge.
Step 5- Add Milk, Cream and egg yolk mixture into a medium sized pot. Stir continuously for 5 minutes. After 5 minutes turn fire off.
Step 6- Pour custard mixture into a medium sized bowl with a mesh strainer inside. Once you poured all of the custards contents into bowl remove mesh strainer.
Step 7- Add 2 teaspoons vanilla extract. Stir all ingredients together. Place plastic wrap on to custard. Place in fridge for 6 hours or overnight.
Making your Banana pudding ice cream
Note- You must freeze the base of your ice cream maker for 24 hours before making your ice cream. See your ice cream makers manual on instructions in regard to freezing you ice cream maker’s base.
Turn your ice cream maker on.
Step 8- Pour custard into ice cream maker base. Let churn for 25 minutes.
Step 9- After 10 minutes chop 1 banana into quarter pieces and 25 vanilla wafer cookies in half.
Step 10- Add chopped Banana and vanilla wafers into base of ice cream maker. Let churn for 15 minutes.
Step 11- Add Ice cream into airtight container or bowl. Place in freezer for 6 hours or overnight before serving. Keep ice cream in freezer at all times.
