What you’ll need
1 pound 12 ounces 975 grams Frozen cut okra (Thawed)
4 large eggs (Room temperature)
Yellow cornmeal
All-purpose flour
Vegetable or Canola oil
Seasonings
Salt
Tony Chachere’s Creole seasoning
Onion powder
Garlic powder
Cayenne pepper
Preparation of ingredients
Step 1- Add thawed okra into a large bowl. Add 1/2 teaspoon salt. Toss okra with your hands.
Step 2- Separate 4 eggs. Add egg whites into one bowl and egg yolks into separate bowl.
Step 3- Add 1 teaspoon Tony Chachere’s creole seasoning, 1 teaspoon onion powder, 1 teaspoon garlic powder and 1/4 teaspoon cayenne pepper into bowl with egg whites. Stir all ingredients together.
Step 4- Add 2 cups yellow cornmeal, 1 cup all-purpose flour, 1 1/2 teaspoons salt, 1 tablespoon Tony Chachere’s creole seasoning, 1 tablespoon onion powder, 1 tablespoon garlic powder and 1 teaspoon cayenne pepper into large bowl. Stir all ingredients together.
Frying your okra
Preheat fire to medium high heat.
Step 5- Add 48 fluid ounces canola oil into medium sized pot. Let get hot for 15 minutes. If you are using a deep fryer. Preheat to 350 and let get hot for 15 minutes.
Note- Make sure you have your serving dish lined with napkins ready before frying your okra.
Step 6- Add egg whites into okra. Toss okra with your hands until it is coated with the egg white mixture.
Step 7- Add okra into cornmeal All-purpose flour batter. Cover with lid and shake bowl.
Step 8- Add okra into hot oil. Let fry for 6 minutes. Remove okra and place onto serving dish lined with napkins. Let cool for 5 minutes before serving.
