Broccoli and cheese rice

8 to 10 servings

What you’ll need

2 large heads of broccoli (1lb 5 ounces in weight)
1 pound extra sharp cheddar cheese
Romano cheese
Shredded parmesan cheese
Evaporated milk
Heavy whipping cream
Sour cream
Salted butter
Day old cooked long grain rice

Salt
Black pepper
Tony Chachere’s creole seasoning
Chef Paul’s vegetable magic
Onion powder
Garlic powder
Ground turmeric


Tools you’ll need
Cheese Shredder
10-inch round cast iron skillet or small casserole dish


Preparation of ingredients
Broccoli

Step 1- Rinse 2 large heads broccoli. Chop stem off of broccoli and separate the broccoli florets. Cut any stems off of the broccoli florets. Place broccoli floret pieces into a medium-sized bowl.


Cheeses
Step 2- Shred 1 pound extra sharp cheddar cheese and 2 ounces Romano cheese. Place cheeses into fridge after shredding.


Parboiling broccoli florets
Preheat fire to medium heat.

Step 3- Add 1 1/2 quarts water and 2 teaspoons salt into a medium-sized pot and let come to a simmer. Add broccoli floret pieces into simmering water and stir. Let simmer for 2 to 3 minutes. Add broccoli florets into a medium-sized bowl and let cool.


Making the cheese sauce
Preheat fire to medium-low heat.

Step 4- Add 1 1/2 cups evaporated milk, 1/3 cup heavy whipping cream, 2 or 3 tablespoons sour cream, 1/2 or 1 teaspoon salt, 1/8 teaspoon black pepper, 1/4 teaspoon Tony Chachere’s creole seasoning, 1/2 teaspoon Chef Paul’s vegetable magic, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder and 1/4 or 1/2 teaspoon ground turmeric. Stir all ingredients together.


Step 5- Add 1 pound shredded extra sharp cheddar cheese, 2 ounces Romano cheese, and 1 ounce of parmesan cheese. Stir continuously for 7 minutes or until the cheeses has melted into the milk. Add broccoli florets and 4 tablespoons melted salt butter and stir. Add 20 ounces in weight of the cooked long grain rice and stir until combined.


Heating the skillet
Preheat oven to 400 degrees.

Step 6- Add cast iron skillet in oven for 6 to 8 minutes. Remove cast iron skillet from oven and spread 1 tablespoon salted butter around the skillet.


Set oven broiler to high.
Step 7- Add Broccoli cheese rice mixture into the skillet and spread around as evenly as possible. Place into oven broiler for 4 minutes. Remove from the oven broiler and let cool for 10 to 15 minutes before serving.
